Great Chicken Marinade

I've been looking for a good marinade and I think we found it! I only marinaded it for 3 hours because of time and it was great. I can't imagine how yummy it will be overnight!

Banana Cake VI

followed the recipe exactly. I think there was too much confection sugar. We really liked it though. Oh- after an hour the cake was still way under done so we raised the temp to 300 for 15 minutes because I didn't have time to wait at 275!

Chicken Cordon Bleu II

Reviewed: Feb. 8, 2012
yummy. I tried doing it in the oven after I browned it but the chicken stayed raw. I will follow the directions next time! I used Fat Free 1/2 and 1/2 and browned chicken in butter and oil. my hubby loved it. Anyone know how to keep the cheese inside the chicken though?

Classic Greek Spinach

Reviewed: Jan. 9, 2012
we make something similar (I am middle eastern). However, we use lemon (about 1/8 cup) and meat, but don't use onions or garlic. also we cook the rice separate. I didn't miss the meat but didn't love the onions/garlic. It was also a tiny bit thicker than I like. Next time I will use 3 1/2 - 4 cups of water and 1/2 can of tomato paste. I used a whole bag of fresh spinach and only enough oil to sautee the onions- so I'll skip that completely next time. used 1/2 of a large chicken bouillon. can't wait to try again.

Shrimp Fried Rice II

Reviewed: Nov. 11, 2011
everyone loved it! I skipped the regular onion. used a whole bag of shrimp. added carrots, broccoli and frozen peas (boiled for a couple minutes and then stir fried). skipped bean sprouts but would love that addition. Also for sure do egg separate so you can see actual egg. easy and quick and yummy! 2nd time used asparagus, snow peas, peas, carrots, broccoli and eggs separate- so much more authentic. used tofu = next time marinate for 10 minutes in soy sauce, red pepper flakes and rice wine vinegar then add with shrimp.

Caramel Macchiato Cheesecake

Reviewed: Oct. 23, 2011
if you like coffee cheesecake this is the one for you. used starbucks brewed espresso (2 to 3 shots is 1/4 cup). baked for an hour and half and let sit in oven for another hour- no cracks at all (used water bath). drizzled with saunders caramel sauce. I bet chocolate somewhere in there would be yummy.

Jamie's Cranberry Spinach Salad

Reviewed: Sep. 5, 2011
we all loved it. used whole raw almonds and chopped up- the extra big crunch was yummy. added blue cheese and used a 10 ounce bag of baby spinach. I don't think you need all that dressing and definitely not all that oil (next time I will use half of the oil and try using half of the sugar). yummy, thanks.

Angela's Awesome Enchiladas

Reviewed: Aug. 30, 2011
For the effort it took I think it tasted very similar to Chicken Enchiladas II on this site. I just would adjust that one by added some taco seasoning and enchilada sauce- it's much faster. I would definitely use a costco chicken as it's much cheaper and faster than shredding your own after cooking. thanks!

Megan's Granola

Reviewed: Aug. 4, 2011
yummy. only had almonds and pecans so used 3/4 cup of each. husband thought needed tiny more sweetness but I disagree. baked for 50 minutes at 250 degrees and crisped up nicely after it was out of the oven. I might experiment with applesauce instead of oil next time but for now it's delicious! 2nd time-substitued 1/2 oil for applesauce- could even do more! used walnuts, pecans, sunflower seeds and almonds. sprinkled flax seed(ground) on top. delicious. oh and use old fashioned oats!

Too Much Chocolate Cake

Reviewed: Jul. 16, 2011
I just think ghiradelli brownies out of the box are better than this cake. It was very good but in my opinion not worth the extra work (it is not a lot of work but you can have better tasting dessert that is even less work!). I think I might experiment with coconut or peanut butter because it is an interesting start. thanks! I am giving 5 stars only for the opportunity to make it with different combinations!

Ultimate Twice Baked Potatoes

Reviewed: May 21, 2011
these were good for company because you can make the day before. I used small potatoes which was great (one per person- took a little off the top) if you use large cut in 1/2 and use both sides. added cream cheese in place of some sour cream.
