I work in a medical clinic by day but i am a foodie all the time! I talk with patients all day about diet and nutrition and can really connect with patients who love food and don't want to give up flavor.
My favorite things to cook
I love to bake - it helps to relieve stress. There is nothing better than cooking big meals for friends and family. I'm from southern Missouri and good ol' country dishes like fried chicken and mashed potatoes. I am always up for a challenge so cooking with spare ingredients in the house are always fun times and my husband has yet to dislike anything i have made!
My favorite family cooking traditions
Christmas sugar cookies and a special icing. I only got the recipe becuase i swore i would only give it to my children.

Oatmeal Banana Raisin Coconut Cookies
I was wanting to do something with my very ripe bananas other than banana bread and this was the perfect fit! I used butter instead of margarine and they were perfect! I found they browned within the last minute of baking so I watched to make sure they didn't brown too much. I also used parchment paper instead of greasing the cookie sheets and they came right off the sheet with no issue! I also decreased the flour by about 1/8th of a cup as many said they do not spread and i wanted a thinner cookie and they spread out just right. Fantastic! I will use this recipe over and over again!

Quinoa Tabbouleh
I took this to a pot-luck at my church and the bowl was cleaned out! so many people asked for the receipe we ended up making copies to go around. i will use this one many more times! I only had one change which was to add 1/8 cup red wine vinegar - gave it a zing that everyone loved.
