Pumpkin and Sausage Soup

My family likes spicy foods and everyone thought this soup was awesome! Definitely had a kick with the andouille. I made it for Thanksgiving and it was unanimously agreed that this soup should become a new family tradition and will make an appearance every year at our Thanksgiving table. A caution, this is a pretty involved recipe -- I dirtied a lot of dishes and it took a long time to make. Not something I would be willing to make just any old night of the week, but for special occasions, the final product is well worth the effort!

Sweet and Savory Slow Cooker Pulled Pork

I did tweak the recipe a bit . . . but this pork was amazing. So good on potato rolls/buns. I made this for a family gathering and there were NO complaints! The only reason I gave it 4 stars is because I think the way the recipe is written is far more complicated than what it needs to be. Flavor wise, this is five stars all the way! Thanks for sharing!! Tweaks: I used Diet Dr. Pepper instead of root beer ('cuz that's what I had in the house). I didn't do all the marinading part nor the pre-browning part -- seemed too complicated, messy, and time consuming -- but just put everything together in the crock pot. I did fork and then rub the pork with the spice mix, but then put it directly into the pot. I didn't have any ginger, so I omitted that, but increased the dry mustard to 1 tsp, and used 1/2tsp garlic powder instead of 1/4tsp garlic salt. And I used 2oz whiskey because I was too lazy to try to eyeball half a shot in my 1 oz shot glass. :) I used Bull's Eye Hickory Smoke bbq sauce, and I think that hint of smoke really complimented the recipe well! My roommate loves his food spicy hot, so he added 1/2 tsp Frank's Red Hot to his sandwich after I plated it. He thought that made it perfect.

Cowboy Oatmeal Cookies

These had GREAT flavor! I didn't expect them to be so crunchy and if I make them again, I'll probably reduce the oats by a cup. They are very sweet, which is my preference in a cookie, but my roommate thought they were too sweet and would have preferred them without the butterscotch chips. I definitely recommend giving this recipe a try!

Cooky Cookies

I read the reviews before trying this recipe out and have to disagree with what most reviewers said; there is WAY too much oil in these cookies. I used 3/4 of a cup and wish I had decreased it to a 1/2 cup, or even omitted it all together and used milk. I liked the texture of the cookie -- the crunch of the cereal with the chewy oats and coconut, but found the flavor pretty bland. I would add some cinnamon, use 1 Tablespoon vanilla instead of two teaspoons, and add chocolate chips. But I probably won't be making this one again. There are better cowboy cookie recipes on this site that I have tried. It was also super annoying having to scrub my hands clean between every batch in order to not get oil all over everything I touched.
