Souvlaki

This is an excellent marinade that I use when I make a pork tenderloin which I cook in the oven with cut up peppers and onions. I serve it with a greek salad, flat bread, and tzatzik sauce.YUM!

Greek Tzatziki

My husband's cousin from Greece taught me how to make a Tzatziki sauce a lot like this recipe but without the dill.I make this sauce whenever I fix a pork tenderloin. I use the Souvlaki recipe by Abby Benner to marinade the tenderloin.I use Fage Fat-free yogurt which I buy at Trader Joe's. It's thick and doesn't need to be strained.

Calamari Macaronatha

My husband has been talking about this meal since last summer when we had something very much like this in Greece. My husband and mother-in-law (who is 100% greek) loved it.I could not find Mizithra cheese, I looked in a greek cookbook which said there is really no substitute but to try pecorino romano.

Chicken and Artichokes

This was a good chicken dish. I used whole boneless skinless chicken breasts and followed another reviewer's advise by adding garlic powder to the chicken and I doubled the sauce ingredients and added parsley and less rosemary. I served it over brown rice and my husband really liked it.thanks Christine.

Blueberry Cream Muffins

I made a lot of changes to this recipe and that is probably why they weren't the best I've ever had. I used egg beaters instead of eggs, canola oil instead of vegetable, 2c. wheat flour and 2c. unbleached and reduced fat sour cream. Next time I will add more vanilla and try some of the other suggestions like the lemon yogurt and brown sugar.

Banana Crumb Muffins

My whole family liked these and I will be making these again. I took the advice of some of the other reviews and added 1 tsp. cinnamon to the batter, 1c. flour and 1/2c. wheat flour, and used reduced fat margarine for the batter but butter for the topping. Next time I will put the topping on 10 minutes before they are finished baking.

Red Skinned Potato Salad

My husband and I thought this was the best potato salad. I used 5 eggs instead of 6. I used Hellmann's low fat mayo and only used 1 1/2 cups, which was plenty. I also used a little less bacon because my daughter and her friend ate a few slices before I put it in the salad. Make this a day ahead of time.

Garden Veggie Pizza Squares

This is fantastic!!! I made it for a high school graduation party and the next day my nephew asked me how to make it because all of his friends raved about it. I used reduced-fat cresent rolls, reduced fat cream cheese. Make sure the cream cheese is room temp. and use a mixer. Wait until the crust is completely cooled and put together an hour before serving.

Creamy Chicken with Corn, Tarragon and Tomatoes

Even my kids liked this. (They are picky eaters)I did make a few changes. I pounded the chicken first to thin it out. I reduced the amount of chicken broth to 3/4 cup and used less fresh tarragon and the tomatoes I cut up in large pieces.I used 1/4 tsp. salt and 1/8 tsp. pepper.

Seven Layer Taco Dip

I made this for a family picnic and a lot of people really liked it. I used reduced fat cream cheese and 2% cheddar cheese. Next time I will use fat-free sour cream.I agree with some of the other reviews, you really don't need to add tomatoes on top of the salsa and I used medium salsa.

Tuna Pita Melts

These Tuna Melts are so quick and easy to make. My husband and I love them. I leave out the salt like others have suggested. It doesn't need it. I also never thought I would like dill pickle relish because I don't like pickles but it tastes good mixed in with everything. Thanks for this recipe.

Low-Fat Blueberry Bran Muffins

My family is divided on these muffins. My 14 year old and I really like them but my husband and younger child said they were gross. I used wheat flour and not all-purpose and Egg Beaters instead of an egg.I coated the blueberries with flour before adding them to the mixture, it's supposed to keep them from sinking. One of these muffins is only 2 points for Weight Watchers.

Quesadillas II

My daughter and I loved these quesadillas. I used 3 chicken breasts cut up into bite size pieces. I cooked the chicken like the directions said but then I added OLD EL PASO mild taco season mix. I also added some chopped red pepper as someone else had suggested. I used 2% shredded cheddar, to cut down a little on the fat. When they were finished cooking, I opened them up and added shredded lettuce, mild salsa, and fat-free sour cream. Then closed them up and cut with a pizza cutter.

Grilled Garlic Potatoes

This recipe was very bland. I did not add the cheese to try and cut down the fat. I sprayed the foil with Pam. The potatoes were moist and did not stick. If I make this again I will add the cheese and use the suggestion by another review that said to add basil.

Garlic Mashed Potatoes Secret Recipe

I made this for Easter dinner and it was very good but I had no idea how to roast garlic. It ended up being more time consuming than I thought it would be. I used 1/2 the amount of garlic and cheese as someone else had suggested.

Simply Succulent Shrimp

This is a great way to have shrimp. The hardest part is peeling the shrimp. I mix the shrimp, garlic butter,cooked frozen veggies,and San Giorgio Roasted Garlic Angel Hair pasta together and my husband loves it.

Cool Whipped Frosting

This frosting is perfect with the Black Magic Cake. It's simple to make and has a wonderful flavor without being too sweet. Double the recipe to frost a 2 layer cake. I added a little Almond extract to the vanilla. Everyone loved it!

Black Magic Cake

I made this cake for a birthday party and everyone loved it! I used 1 cup of hot instant coffee (about a TBSP coffee in 1 cup hot water)I frosted it with the Cool Whipped Frosting (double the frosting recipe)This was the best chocolate cake I ever made and it was easy!
