Shrimp Fried Rice II

Wonton Soup

This was great. I substituted the pork and shrimp with ground turkey. But the broth needs work to really make this special. I doctored it up quite a bit.

Roquefort Pear Salad

Excellent salad!!! One thing I did differently. I used maple syrup instead of sugar and it worked great. Also, I didn't find that the avocado added anything to the salad. I think it's safe to use blue cheese or Stillton if you can't find Roquefort.

Saffron Rice

This was not that much of an effort. It's how you make good rice. Basmati is the way to go. Next time I think I'll make it with some slivered almonds and either dried cranberries or currants. My rice took about 20 minutes, not 40...so pay attention while it's cooking.

What a disappointment!!! Not even close to being an "Indian" dish. Turned into a big pot of grease. I can't believe the reviews. The flavors weren't enough for this much lamb. Also, why use canned carrots and potatoes?

Fiesta Chopped Salad

Perfect "summery" salad recipe. I took it to a potluck, and it was gone quickly. I may add some garbanzo beans, and use cilantro instead of the parsley next time. There's many possibilities with this salad.

Pollo (Chicken) Fricassee from Puerto Rico

The flavors in this dish are outstanding. The prep time is long but worth it. I didn't bother peeling the potatoes and it made no difference in the flavor. I also peeled the skin off the chicken because I didn't want this to end up too greasy. The one thing I would change here is the amount of chicken and potatoes. Not enough meat, and way too many potatoes. I might also add some peas or corn to it in the end. This turned out like a stew, so no rice was really needed here.

Kona Chicken

A simple recipe to make for fussy company. Made this for our in-laws who eat very bland, and they loved it. We also enjoyed it but it's not something I'd make every day. The dark meat was cooked to perfection but the white meat was a little dry.

Orange Chicken Stir Fry

This is a great recipe that I will make again for sure. I did add lots of extra orange zest which I think made a big difference. In the future I will probably add more ingredients to it. I think it will try adding mushrooms, cilantro, and green onions next time. It tasted good but I felt like it could be improved upon with more ingredients.

Smothered Mexican Lasagna

Not too bad of a recipe. I did change some things. Instead of using flour tortillas I used corn. I just didn't think flour tortillas would add enough flavor. If I make this again I think I will add refried beans, olives, and another type of cheese. The ricotta didn't hold up very well.

Artichoke and Mussel Bisque

Artichoke and mussels happens to be two of my favorite things. The soup was very tasty but I honestly felt that the flavor overpowered the mussels. I like the soup on it's own better. I think that the artichoke flavor wasn't that complimentary to the mussels.

Three-Onion Pie with Feta or Goat Cheese

This pie is more like a side dish. I wouldn't recommend it as a main dish unless you are an onion freak. I probably won't make it again. The effort isn't worth the taste.

Spinach Mushroom Quiche

I just loved this recipe. Using the crescent rolls really made this more interesting. I think it's a versitile recipe as well...I used a different soup mix. My boyfriend was upset that I ate all the leftovers:)
