The Best Vegetarian Chili in the World

I can't count the number of times I have made this recipe or variations of it since I found it 3 or 4 years ago. It is DELICIOUS. I have made it exactly as written, with beef or turkey when cooking for omnivores, with substitutions or omissions when I forget an ingredient, and with cocoa powder for a chocolate chili - all of these have turned out wonderful. No matter what variations I do or do not make, this chili always meets rave reviews. This is my go-to base recipe and I love that I can feel confident that it will still turn out great even if I forget something (example: I am making it now and forgot to get celery). Great recipe! Thanks so much for sharing!

Award Winning Soft Chocolate Chip Cookies

I have made this recipe countless times since finding it on here a few years ago and my cookies have turned out perfect every single time. Usually, I follow the recipe exactly (minus the optional walnuts), but I have also made changes and substitutions here and there (almond extract when I didn't have vanilla, replacing some butter with applesauce, etc.) and they still turn out amazing. To those that have left reviews saying these are not soft: You must be doing something wrong - these cookies stay soft even after they've been sitting around and gone otherwise stale. One tip: If you mix by hand, like I do, it helps to melt the butter first, otherwise the dough is a bit dry and difficult to fully mix. I get so many compliments on these cookies that I can't imagine ever looking for another chocolate chip cookie recipe again. Perfect!

Cabbage Patch Soup

I was looking for a way to make something of the random leftover ingredients I had around, and this definitely turned out to be a great choice. I made a couple changes: I used vegetable broth, omitted the peas, made my bacon bits fresh then used the bacon grease in place of the olive oil, and substituted Greek yogurt for sour cream. Otherwise I followed the recipe and my boyfriend and I both loved it. Not only did it taste great, but it was a fantastic hangover cure as well! Will definitely make again.

Creamy Summer Squash Soup

This soup was a delicious way to use up the huge amounts of summer squash I've been getting from my CSA. I made a few changes: I diced half of a small red onion and sauteed in butter before step 1. I replaced the terragon with thai basil and the half and half with hemp milk because that was all I had. Turned out great though. I would give it 5 stars, but even with the addition of the onion it was just a bit bland for my taste. Next time, I will add celery in with the onion and maybe a tiny bit of either jalapeno or cayenne pepper.

Tomato-Curry Lentil Stew

Just made this (with a few minor changes) and it's delicious! I used olive oil instead of butter, 1 sweet potato and about half of a large red onion. I also could only find the grey-green lentils, which look disgusting but taste great, and I doubled the amount called for and added 1/2 tesp of cayenne pepper after it was all done because I felt it needed a little kick. I only pureed part of it, mostly the sweet potatoes. Great served over brown rice! I'll definitely be making this again.
