Peach Muffins

These were very good! Super quick and easy, and a nice new way to use up our summer peaches. I used just-picked peaches, and thus they were moist enough that I didn't need to add liquid. However, I can see how that would be needed with less juicy peaches. I took a few suggestions from here as well - added a little nutmeg, and 1 cup of whole wheat flour.

Chicken Enchiladas I

Very good! I too made a few changes: Substituted enchilada sauce for taco sauce, and mexican/taco cheese mix instead of just cheddar. I left out the tomato sauce and water. Also, I seasoned the chicken with salt and pepper before browning it. I also sauteed the onion, pepper and garlic with some tomato paste before putting the chicken back in the pan, just to cook them through a bit.

Caramelized Onion and Gorgonzola Pizza

Delicious and easy dinner! I made my own whole wheat pizza crust, which was a nice complement to the flavors. I doubt I used a whole pound of gorgonzola- I just sprinkled a thin covering on top of the onions.

Tomato and Basil Quiche

This recipe was a hit! Delicious, and not too "eggy." I did change a few things: added chopped mushrooms (family preference), diced the onions and used fresh basil. I only had shallow pie crusts on hand, so I divided the mixture in two. This worked nicely, so I may do that for the next try as well.

Asiago Sun-Dried Tomato Pasta

Very good! We really enjoyed this recipe. To make it vegetarian-friendly, I didn't use chicken or bacon. We substituted baby portabellas instead, which were delicious, and also added extra sun-dried tomatoes. We also used olive oil instead of butter (mainly for the taste). The flavor was great, and I will definitely make it again. It was also great with whole-wheat pasta!

Bell Pepper-Feta Pasta Toss

Great recipe! So easy, and really great for leftover lunch the next day. I would add some more feta to add more flavor, but other than that it's great. Also works well with whole wheat pasta.

Chicken Pasta I

This was a great, light recipe. I used Italian-style diced tomatoes, as well as one orange and one red bell pepper. Next time I will add more tomatoes and mushrooms to enhance the taste, but overall we really enjoyed this!
