Chicken Tortilla Soup III

This soup was great. My father who doesn't like soup went back for seconds. The only thing I will change is to thicken up the soup a little and add more corn. I also served with the chips on the side and some sour cream. The serving size seems off, it made way more than eight servings. I will definitely make this again.

Baked Pineapple Casserole

This is an excellent recipe. I did cut the sugar by half and it was still plenty sweet. My father who doesn't like pineapple really liked this. I will definitely make this again.

Slow Cooker Italian Beef for Sandwiches

This recipe was very yummy. Everyone raved over it and wanted the recipe. I also substituted beef broth for water and added an extra 1/2 cup water for more juice. I cut the recipe in half but I still added the entire package of dry italian dressing mix and it wasn't too strong at all. I melted a piece of provolone cheese over each sandwich and used the broth for dipping. Will definitely be making this again.

Amusement Park Cornbread

This has to be the best cornbread I have ever eaten. I am not crazy about cornbread, but I couldn't get enough of this recipe. I used an 8 inch cake pan and cooked it for about 5-10 minutes longer and watched it carefully at the end to make sure it was done. I have made this several times and it will now be my only cornbread recipe.

Ground Beef Stroganoff

My husband and I thought this was disgusting. I even added some worschteshire sauce and couldn't eat more than a couple of bites. It was also hard to get all of the grease out of the ground beef so it was a little too greasy for our taste. This recipe will be going in the trash. Sorry.

Irish Cream Chocolate Cheesecake

I made this for a my husbands work Christmas potluck and everyone loved it. I didn't think it had a classic cheesecake texture but the taste was terrific. I added 1/2 cup Irish cream and it wasn't overpowering. My cake cracked so I just spread a layer of whipped cream and some cookie crumbs on the top and it actually looked store bought.

Heavenly Pink Salad

Orange Cream Fruit Salad

Very good fruit salad. I loved how quick it was to put together. I also used a large box of pudding and drained the fruit for about an hour so the dressing wouldn't be soupy. Make sure to add the bananas right before serving so they won't be brown. The down side is that it doesn't look appealing the day after if there is any left. Will make again.

Savory Spinach Casserole

I made this recipe for Christmas and everybody loved it and asked what was in it. I am not crazy about spinach but I really liked this one. I followed the advice of another reviewer and mixed the spinach into the cheese mixture. I also added a half of a can of cream of mushroom soup and about a 1/4 teaspoon of garlic powder just to give it a little extra flavor. Very good. Will definitely make again.

White Cheese Chicken Lasagna

Very good lasagna. It took a little time to prepare, but it was well worth it. I made it for a family function and everyone liked it. I mixed about half of the spinach into the ricotta cheese to make it easier to spread. I also used the no boil noodles which were much easier and came out perfect.

Bake Sale Lemon Bars

Very good. I also adjusted the recipe some. I cut the cooking time by about five minutes, I increased the lemon juice to 1/2 cup and I used an 8 1/2 x 11 in. pan. The bars came out perfect. Not too tart. Just the right amount of lemon flavor. Be sure to grease the pan really, really good. I had a little trouble getting them out.

Chocolate Chip Cheese Ball

This was wonderful. I made it for a Super Bowl Party and everyone loved it. I served it with combination of plain and chocolate graham crackers. I did add the extra powdered sugar as suggested by another review and it turned out perfect. I didn't have any trouble forming the cheese into a ball.

Cream Cheese Cut-Outs I

I am always looking for a good soft cookie recipe, but I thought the flavor was extremely disappointing. These cookies had hardly any taste and were not sweet at all. They tasted more like a bisquit to me. I would never make them again.

This recipe has very good flavor, but I found it to be a little dry. I made it with sour cream instead of the mayo, as per a suggestion by another review. I will try mayo next time.
