About this Cook
Single guy, 35, business owner. Food Channel addict. I cook on weekends and package everything in single portion containers to spread throughout the week. My Foodsaver is one of my favorite kitchen tools.
My favorite things to cook
I get a lot of wild game from my parents. I like virtually all foods. I cook usually based on the ingredients I have available. I don't follow recipes exactly, but use them as guides. I hate wasting food, so I just look at what I have and get creative.
My favorite family cooking traditions
Baking has always been a staple in my family. Lots of canning too. We always had lots of acres and big gardens and orchards. Lots of fresh or canned fruits and vegetables.
My cooking triumphs
I made some unbelievable chocolate mint meltaways similar to the ones they make at Marshall Fields. OMG to die for... I got a recipe published on here too. :)
My cooking tragedies
I wasn't paying attention and melted my tea pot to my electric stove. See- I can't even boil water !!!

Caramel Apple Cheesecake
I made this for Thanksgiving and it was a complete hit. No crumbs left on the plate. I used Grandma Ople's apple pie recipe for the filling with granny smith apples. Complete hit! Pretty much followed the recipe to a T, this was a winner for sure!

Quick and Easy Alfredo Sauce
Not the classic homemade version, but still very quick and tasty. I will make this 4 out of 5 times unless something special is happening when I bust out the fresh cream to do it the right way. Kids don't care, this works just fine for them... :-)

Baked Spaghetti Squash Lasagna Style
This was a healthy alternative. I used standard pasta sauce, added mushrooms and italian sausage. Layered with ricotta, sauce, squash, and shredded cheese (everything twice) and baked it off until bubbly and the cheese browned. The kids didn't even realize it wasn't spaghetti. They really thought it was pasta. They were super surprised when i told them it was squash... will probably make this again without the shells. The novelty only works once...
