Red Skinned Potato Salad

Reviewed: Sep. 8, 2013
This was a great potato salad. Got rave reviews and was all gone at the last party I served it. The only changes I made were to use 3 pounds of potato and I add some chopped spring onions. Definitely a keeper.

Pizza Dough II

Reviewed: Feb. 22, 2015
Turned out a great pizza base...made exactly as described...and baked it on a pizza stone in my charcoal grill. The crust was thick and a had a nice chew to it. You definitely have to cook this on a stone at high temps for it to work.

Indian Chicken Curry (Murgh Kari)

Reviewed: Jun. 7, 2015
This was excellent. Satisfied my craving for Indian food. Spicing was very good, not over the top. The only change I made was to cube the chicken breast. Served over rice with some homemade naan bread.

Classic Dinner Rolls

Reviewed: Nov. 23, 2014
Made this tonight with the only variation being in rise times...I was in no rush so I let the first rise go for 1hr, then formed the rolls and let them rise for another 30mins. Brushed with milk and sprinkled some poppy seeds on top. Cooked for exactly 20mins. They came out perfectly...soft and fluffy. The are definitely on the sweet side, which is fine by me for a dinner roll. I think you could play with the recipe plenty...mixed italian herbs....bacon and cheese etc. I'll definitely use it again.

Summer Squash Puffs

Reviewed: Aug. 24, 2014
Made this recipe as described with the exception that I pan fried them; as a result they came out more like a fritter. They were easy to make and tasted great, even cold the next day. Will make again.

French Baguettes

Reviewed: Nov. 24, 2013
Easy & Tasty....I didn't use the bread machine...just did it in a mixing bowl by hand. For some variation, once the dough is rolled out spread some diced bacon, cheese and Italian herbs over it before your roll it up!

Jay's Signature Pizza Crust

This came out pretty good...like others I added 1/4tsp each of garlic and onion powder, then 1TB of mixed italian herbs. I baked @425F on a stone. The edges browned up nicely and the base rose well.

Lemon Ginger Shrimp

Reviewed: May 30, 2015
tried this yesterday; Followed the recipe except I had to use powdered ginger as I had no fresh. I also added 2 TBS of Tequila. I left the lemon out and marinated for 8hrs...then added the lemon 1/2hr before I grilled them over charcoal. This was a very good marinade and I will keep it in my repertoire. I'm sure it would be better with fresh ginger.

Beef and Irish Stout Stew

Reviewed: Feb. 24, 2015
I've made this 3 times now and it is excellent. I would give it 5 stars except I had to make some adjustments to the ingredients and changes to the method, but they are primarily for personal taste. Changes; 2 whole cans of Guniness 1 whole small an of tomato paste 2 cups of beef stock 2 sticks of celery 3 rashers of bacon Method Cook bacon over medium heat untill crispy Remove and crumble Sautee onion, celery, carrot and garlic in bacon fat. remove Add olive oil and brown beef in SMALL Batches (very important) Return all beef to dutch oven and mix in flour Add vegetables, tomato paste, stock and beer. Mix well Bring to a boil, reduce heat to low and cook for 4-5 hrs untill the beef is very tender and sauce is thick. Stir occasionally. This resulted in a melt in your mouth beef and a nice thick sauce. The longer cook time also reduces the bitterness of the beer.

Homemade Garlic Basil Mayonnaise

Reviewed: Sep. 8, 2013
Excellent flavor. I dont have a stick blender so did with an electric beater.(Just have to be patient). Also found that I needed to add more Dijon..for my tastes. I used the mayo on the Red Skinned Potato Salad found on AR. Awesome combo.

Marinated, Breaded Lamb Chops with Rosemary and Garlic

Reviewed: May 12, 2014
i reduced Worcestershire sauce to 1/2 a cup and add 1/2 cup of red wine. I marinated for 8hrs in a zip lock bag turning twice. I liked using the marinade in the breading process. I cooked placed directly on oven rack with a tray on the rack underneath (to save turning) and backed for 30 minutes. They were tender and flavorful. A little over cooked (we like as medium rare). The bread crumb did crisp, but did not brown. My only criticism is not with the recipe per say, mainly that all the flavoring really overpowered the lamb. We like lamb for the lamb. I'll definitely try this marinade on some beef though.

Easy Tuna Patties

Reviewed: Jan. 6, 2015
Let me start by saying fish isn't my thing. But I'm trying to eat healthier...so...made these as recipe described...fried a sample and found it bland. Texture was good for a fish cake...just not much flavor... I added 1 x tsp each of Lemon grass paste, minced garlic, minced ginger, 1/2tsp of Chinese 5 spice and finally 1 tbsp of soy. That worked for the kids...then added 1/4 cup of red chilli flakes for adults...came out really nice....sort of a Thai chilli fish cake
