Chicken Enchiladas V

I will start by saying that I'm not a big fan of recipes that contain cream of chicken soup, so why I tried this I do not know! I didn't care for this dish much. It wasn't bad tasting. It was just that the cream of chicken soup made it very rich and I missed the enchilada sauce that the cream of chicken soup seemed to be a substitute for. If you like cream of chicken soup in your recipes you will probably feel differently than I do about this one.

Seafood Stuffed Mushrooms

Egg and Sausage Casserole

This was a really good and looked pretty too. I was conservative and followed the directions exactly. Next time I'm going to add mushrooms and green onions to the egg mix before I pour it over the sausage.

Easy Valentine Sandwich Cookies

These are so pretty! I had to use a different frosting because the one suggested didn't work for me. I brought them to work and didn't want anyone to eat them because they look so CUTE! Oh..and they taste good too..not too sweet ..great with coffee.

Really GOOD Frosting!!!

Quick, easy, tasted great! I downsized the recipe to use for a smaller batch of cookies. I loved it! It came out smooth and I was spreading this on cookies like a pro! I made Valentine's cookies and the pink frosting looks and tastes delicious. I would recommend it and definately use it again! I like the petit fore (sp?) idea and will try that soon.

Pink Valentine Frosting

This recipe left me very confused! I didn't get anything like a frosting with this. I got hard chunks of confectioners sugar. The first review said she added 'more milk'. I didn't see milk on the recipe at all. Was I supposed to add milk? I imagine that would help. It was certainly lacking moisture.

Artichoke Dip I

Very good! I made the mistake of serving this with small slices of sourdough bread instead of french bread. Stick with the french bread for dipping and this is a good one.

Chili Chicken Stew

I liked this one so much I'm glad I doubled the recipe! I did modify it a bit. I used a lot more chili powder and added tabasco sauce to give it a kick. Instead of mixed vegis I just used a bag of frozen corn. The best chicken soup I've ever had!

The Best Lemon Bars

I baked this colorful treat for Easter and everyone loved these. I especially like the tip on making green tinted lime bars and displaying the treats in a checker board fasion. I added 1 drop of yellow food coloring to the lemon bars to give them a more vibrant color. Next time I make these I will double the recommended lemon (and/or lime) juice because I think they would be even better with more tartness to them.
