Thai Chicken Tenders

Reviewed: Feb. 20, 2015
My boyfriend absolutely raved about the recipe and I thought it was great. I chose to use chunky peanut butter and definitely needed add water or chicken broth to too thin. The only reason for the four star rating is that I found that there was a tang missing from it and i couldn't figure out what to add. I think I will take one reviewers suggestion and add lime juice next time to give myself that added a little bit at a of lime juice. We also discuss perhaps adding a bit of steamed broccoli to it not only distracts the meal but to give it a vegetable component. We will definitely be remaking this dish in the future is fast simple filling and delicious.

Irish Beef Stew

Reviewed: Aug. 23, 2014
It was good but I found the tomato paste a little overwhelming. I added 2 tsps of Worcester sauce. Next time I will add more beef broth and a bit more of the Guinness.

Down East Maine Pumpkin Bread

Reviewed: Feb. 28, 2014
OK, I admit it... I used some of the cooks comments. Still I am sure the original recipe deserves all 5 stars. I used 1 cup brown sugar in the wet ingredients, 2 cups white sugar in the dry. I also added 1 tsp vanilla (my grandmother always added this to all the sweet baked goods). Yummmmmm

Slow Cooker Tender and Yummy Round Steak

Reviewed: Apr. 11, 2013
Excellent! I too added some chopped celery (I had some that needed using up)and Beef Onion Soup mix. Added 1/4 t ground black pepper and WOW it was so yummy after about 8 hours. As one reviewer noted the gravy was watery, so I thickened at the end with flour - about an hour before done. I want to point out that almost every crock pot recipe on here has someone stating it didn't get cooked in the time given. Not all crock pots are created equal, and high altitude (where I cook) makes the time somewhat longer. I compensate for it by setting it on high for the first hour and then turn down. I can do this while getting ready for work, then turn down when I leave.

Slow Cooker Split Pea Soup with Bacon and Hash Browns

Reviewed: Apr. 11, 2013
Very good... having had issues with split peas not cooking through in the slow cooker before I soaked them overnight. Forgot to decrease the liquids, so it was a little watery... I simply took some of the liquid and cooked off another cup of peas with some of the additional bacon I had fried up, and a little more sauteed onion. I added some hot chili powder in the place of red pepper, as I love the flavor of it in split pea or lentil soup. Next time I will add a couple bay leaves and perhaps a bit of ham base. (Better than Bouillon brand base) This recipe is definitely a keeper!!!

Roasted Pork Shoulder with Pomegranate Sauce

Reviewed: Jan. 21, 2013
Exceptional!!! I did use the crock pot as suggested by Sherri's review, and I had pomegranate juice so I used that suggestion too. My honey loves garlic, so I upped that. I love the sauce, and next time will play with fresh herbs.

Rhubarb Curry Chicken

Reviewed: Sep. 4, 2012
Very good! A bit sweet for me, so next time I wil try adding some garlic cloves and perhaps rosemary to kick up the savory. I may have used too mild a curry powder as well. Will make again and play with the flavors a bit to suit myself.
