Mom's Best Peanut Brittle

I made this peanut brittle last year and again this year, and I can't believe how easy it is to make and clean up. Last year we made peanut brittle every day for a week because it was SO easy and delicious, we just kept making more to give away! I don't usually write reviews but this is such an easy gift for the holidays. ANYONE can make this. I made a double batch; these were my variations based on the reviews: used 3 cups of peanuts for a double batch, added the peanuts at a little over 250 degrees to prevent burning, added 1 teaspoon vanilla with the butter and baking soda. I'm a good cook but not a candy maker and my peanut brittle has been flawless every single time.
