Russian Tea Cakes I

Simple, classic cookie. Since I live at altitude (4500 ft.) I add 1/2-1 T cream to hold the dough together. Easy to make and everybody has a story to tell about their family's version. Great cookie.

Asian Orange Chicken

Pretty good with a strong orange flavor. I made it as directed except added a cornstarch to the flour to get a more tempura vibe. A Chinese recipe I have for Sweet and Sour Pork used just cornstarch as a dredge and it's great. As others suggested, I did not return the chicken to the sauce, but poured the sauce over the chicken. I also recommend Mandarin Fire Oil as a seasoning on top. It brings out the flavor even more so, although sesame oil is a suitable replacement that adds no heat.

Burger or Hot Dog Buns

Awesome, soft and perfect for burgers or hot dogs. They have enough stability to even hold a heavily laden chili dog without falling apart. So easy I don't have to buy the nasty store ones again!

Simple Whole Wheat Bread

Truly outstanding, easy and, as a breadmaker, fantastic for sandwiches. The texture is fine yet has enough heft to be hearty without heavy, if that makes sense. Will make it again and again. Because of the quantity of dough, use only a larger mixer (6qt was just big enough) if you want to do the kneading by machine.

Chipotle Crusted Pork Tenderloin

Ok, usually I read many reviews first, but I saw a review for this recipe on another pork loin recipe review and just went for it. RED FLAG!! Three TABLESPOONS of chipotle is a lot!! I questioned it at the time, but went with it as we have a high tolerance for heat. As yummy as it is, cut the chipotle to 1-2 Tbls. For dinner, five of us did not finish a 1.25 lb. pork loin (with 2 teenagers.) Made for a fantastic sandwich the next day. As we have family members that are prohibited from eating pork, when they visit I will try this rub on chicken as well.

Beef Stroganoff III

Very yummy. I used fresh mushrooms, added some fresh ground nutmeg at the end and served over old fashioned egg noodles that I had tossed with butter and chopped fresh parsley. Outstanding! The fresh flavor of the parsley is a perfect foil for the creamy, beefy goodness. The kids were stealing bites from the pan.

Make-Ahead Vegetarian Moroccan Stew

This recipe is truly awesome. I added extra spices, as per other reviewers and am glad I did. I went with the ratio of 1.5:1 on the spices, except for the curry which I tripled since I use an awesome brand (Sharwood's) and we love it. Next time I will use hot curry or add hot chili as I needed the heat. Served with a dollop of high quality plain greek yogurt and pita bread. Next time, I will make some basmati to accompany. I had no dried apricots and I did not miss them, though I will add them next time for comparison's sake.

Baked Swiss Steak

Yummy. I doubled the recipe,added more veg, garlic powder and lots more Worcestershire Sauce and my family loved it. Really good over bread if you don't have noodles.

Butternut Squash Bisque

Really yummy. I used homemade veg broth and just eyeballed amounts and it worked out great. Slammed it with pepper and extra fresh ground nutmeg to serve cuz they add a nice bite (my family loves pepper and some of my family doesn't like sour cream.) Could also use hot sauce or chipotle because they'll pair with the sweet quite well. I used a very high quality sour cream because why bother with the fat and calories unless it's worth it, right? I think it's important to use whole sour cream because the textural component completes the "mouth feel" for lack of a better phrase. Of course, whole greek yogurt will likely do very well also. Definitely very easy and you can impress guests with it also, while being somewhat healthy and given I have one vegetarian in the house, I don't have to make two meals. Served with bacon avocado sandwiches for the carnivores and a facon (Smart Bacon) avocado sandwich for the vegetarian.

Premium Pizza Crust

eh... was ok. I thought the directions were vague. I added warm water though they didn't say so. I also found the dough very wet and was reluctant to add more flour because other reviewers advised against doing so. Added extra salt as recommended by some reviewers (thanks, it needed it!) Overall, I have others I like better. Certainly miss olive oil in the dough and I thought it was too bready. Sorry :( wish I liked it more.

Slow Cooker Cranberry Pork

Really yummy and easy. I only rated it 4 stars because I had to season with salt, pepper and garlic beforehand, as per other reviewers suggestions. Without question, I would have noticed the lack had I not done so. I also used homemade cranberry sauce, given the time of year, and chopped my onions instead of sliced. Great use for leftover cranberry from the holidays

Apple Pie by Grandma Ople

Like many others, I'd give this more stars if I could. I've been searching for the perfect apple pie for years and now I can stop looking. My changes were few. I chilled my pie crust with the apples in it while I made the caramel. I added about 1 1/2 tsp. cinnamon, 1/4 tsp. fresh ground nutmeg, and about 1/4 tsp ground cloves to the caramel, all dumped in with the sugars. Once the caramel boiled, I turned off the heat and let it cool for a few minutes. Because I like double crusts, I poured the caramel over the apples before laying on the second crust. Some small Halloween cutouts to vent, an egg wash, some white sparkling sugar (large decorative crystals) on top and about a total of an hour and fifteen minutes of cooking time later and I showed off my first harvest of gala apples to perfection. Everyone needs a Grandma Ople :).

No-Knead Artisan Style Bread

Wow. I used fresh herbs from my garden and my family descended like locusts. I served it with a hearty beef stew (I am feeling fall in the air.) Here's a leftover idea: chop the leftover bread into 1" squares, toss with extra virgin olive oil and toast in a skillet over medium heat. Sprinkle with kosher salt and use as the BEST croutons!

Tart Lemon Triangles

Very pretty, very easy, very yummy. No changes necessary. Used a 9" tart pan, although a spring form would work as well, and it baked just enough.
