Sweet and Spicy Stir Fry with Chicken and Broccoli

I went ahead and added baby carrots, giant mushroom slices. and celery. I paired it with brown rice and it's a great, light lunch.

Pumpkin Chili

This was fantastic. I added a tsp of cumin and cayenne respectively and the whole can of pumpkin puree (therefore omitting the need for the sugar). There was no overtly pumpkin taste but the chili was much more filling. I will definitely make this again.

Moroccan Chicken Stew

This turned out great! I paired it with some rice pilaf and crusty bread and it was a HUGE hit with my book club. The servings might be a little off - - this recipe fed five of us with a couple servings left over.

Slow Cooker Cilantro Lime Chicken

Very easy and tasty. I used a lime and garlic salsa so the lime flavor was even more prominent. I mixed it with some brown rice and black beans for mini tacos. The rice, beans, and tortilla really cut down on the spicyness, which I didn't like. I added frozen corn to the leftovers and used them for quesadillas.

Slow Cooker Tomato Sauce

Great flavors but I thought it was a little thin. I added a can of tomato sauce to try and thicken it up. It also didn't have the color I was looking for in a tomato sauce. But the taste was nice and spicy.

Mediterranean Linguine with Basil and Tomatoes

This was delicious. I used whole wheat pasta and the olive oil called for wasn't quite enough to cover the dry taste that comes with whole wheat. Next time I'll bump the olive oil up a bit if I use that pasta again. The tomatoes were perfectly cooked. They just popped in your mouth. This was a big hit at my family dinner.

T's Sweet Potato Fries

I was very disappointed in these fries. Even after reading the reviews and shortening the microwave time, turning fries half way through cooking time, and letting the fries cook longer in the oven, they still came out mushy and burnt.

Teriyaki Onion Burgers

Delicious! I seasoned the meat with some garlic and onion powder then let it sit in the teriyaki marinade over night. The burgers came out great! I'll definitely make them again. **Made these again using ground turkey. I also chopped up some mushrooms and mixed them into the patties. I got five patties from the meat and topped them with grilled pineapple instead cheese. So good.**
