Lighter Snickerdoodles

These were light and chewy....I liked them as an alternative to the cookies that use shortening. I didn't have a problem with the dough being sticky, but I refrigerated the dough overnight. Also stuck it back in the fridge between cookie batches....reminds me of cinnamon toast.

Cottage Cheese Chicken Enchiladas

This is the best recipe...I've tried it with chicken, beef and shrimp and it's always a hit. Have also made it with flour tortillas and it's just as good.

Spinach Mushroom Quiche

Yum! Really easy! Made mine with pre-made pie crust on top and bottom. I couldn't find the lemon herb soup mix, so I improvised with lemon chicken stir fry sauce from a packet.

Strawberry Avocado Salad

Light and refreshing. Left out the sugar, used agave nectar instead of honey. Toasted the pecans in a skillet for just a few minutes. DELIGHTFUL!

Grilled Roasted Red Pepper and Ham Sandwich

Chicken Pot Pie VI

This was the most awesome chicken pot pie ever!!! I used a whole onion and an 8 oz. container of sliced mushrooms from the produce aisle...I also used cream of chicken and cream of celery....that's what I had on hand. I also used fat free cheeses and 98% fat free soups and just added 1/2 cup skim milk. I bought 2 Pillsbury pie crusts and used all but one half of one to make the crust in a 9x13 casserole dish....I used the extra pastry to make flower embellishments on the crust. Will definitely make this again!!! Make sure and brush your crust with an egg wash to get it nice and golden and crunchy!!

Apricot Danish Coffee Cake

This was absolutely wonderful and so easy to make!! I used fresh apricots and took this to our friends lake house. Major hit with adults and kids alike. I'm going to try this again using maybe cherries or some other fruit! You've gotta try this one!

Rhubarb Cheesecake

This was exquisite! I added crushed pecans to the crust as someone suggested....I think you could also use Pecan Sandies cookies for the crust also...has the same sort of taste. This was the perfect blend of tart and sweet. This one is a KEEPER!

Super easy to make! Cut these in large squares while they are still warm and then put a scoop of vanilla ice cream on top with chocolate syrup or hot fudge! Yummy!!! Will make these again!

Crab Quiche I

I will definitely make this again. I used 3 eggs, some hot sauce and Old Bay seasoning as suggested by other cooks. I did not use a crust and baked these in buttered small souffle dishes. Great recipe!

Luau Chicken

This was good and easy to make. Next time, I would maybe rub some ginger into the chicken before cooking it to give it a little more flavor. Also added chunks of pineapple to the sauce to give it a little more zing.
