Pea Salad

I've used a similar recipe before and its delicious, like my Grandma makes. I like to add peanuts, and put the cheese in cubed rather than shredded. Also, I'd say its good without onion too and with some salt/pepper or other seasonings.

Cha Cha's White Chicken Chili

I tend to use recipes as guidelines and means of inspiration so I almost never follow them exactly. So, while I made my own adjustments I'd still say this recipe is an amazing base and guideline for the perfect "white" chili.

Key Lime Pie VIII

This was delicious, and it didn't taste like eating straight cool whip like I was worried it might. I used keylime, lime, and lemon juice. I added slightly less than the recipe calls for and it was just right.

Nutty Brown Rice Salad

I was really excited about trying this recipe but the outcome was kind of a let down. Sure this is healthy salad, but that's about all it has going for it. It taste like eating cold rice, which I guess I just realized is not very pleasing to my palate.. I plan on trying to mix the leftovers into some chicken enchilada recipe. My husband like it ok, so it could just be me. But when it comes to salads there are a lot of others I'd recommend before this.

Spicy Chipotle Turkey Burgers

My husband and I really enjoyed this. It could've used more chile/adobo and maybe less chopped onion (I prefer fresh onion on the outside of the burger); still it was great! Definitely want to make again!

Jose's Shrimp Ceviche

If you're going for authentic, sure follow the "cook" in lime juice method; but it's still delicious if you use pre-cooked shrimp. If I had been brave enough to use fresh, raw shrimp I would let it marinate longer just for good measure even if pink/opaque shrimp is the sign of it being done. I really enjoyed the flavors in this dish, despite not being a big seafood fan. I made it for my husband who loved it.

Cake Balls

I have a major sweet tooth, but these were almost too sweet. Plus, despite chilling them over night, it was still difficult to keep them looking pretty in perfect ball shape and covered all the way with a smooth coating of chocolate. I'm sure there is no real flaw in the recipe itself though. I just don't plan on ever making these again.

Puerto Rican Meat Patties

I changed up the recipe, based on other reviews. So with the changes I think it turned out better than the original recipe allows. I made homemade empanada dough instead of using egg roll wrappers. I also made homemade sofrito to add to it in place of the veggies. I thought the tomato sauce and ground made it seem a little like sloppy joes, but my husband loved them, so all is well since he's the reason I tried the recipe at all. I think in the future, I'd add some hot sauce and use a shredded beef or pork instead.

Pumpkin Chocolate Chip Muffins

Great recipe, only a few things I found from making them a couple times. Adding a little more pumpkin is better. I replace one egg with more pumpkin. Also, 375* for abt 20 min is way better than 400* for my oven. very yummy though and simple. I've tried other recipes that use apple sauce or yogurt or sour cream instead of oil...but these are just delicious.

Key Lime Pie VII

I made 1/3 of this recipe and used it as the bottom layer to my two layer keylime pie (top layer being a nobake keylime pie recipe on this site). It was really good and I think I'll make it a thicker layer next time. Amazing consistency and didn't taste at all like sour cream, thank goodness.
