Asian Lettuce Wraps

I think it would have been a 5 star recipe if I followed it exactly and I rated it as such. I didn't have the chili pepper sauce or the sesame oil or the pickled ginger, so I grated a large carrot, diced 2 stalks of celery, diced 1/2 medium red pepper and added 4 more minced cloves of garlic and 2 tablespoons more of the hoisin sauce, 1 tablespoon more soy sauce and about 3/4 teaspoon of powdered ginger. My version was a 5, in my opinion. Thank you, Rachel, for the recipe!

Cauliflower Casserole

This was a really good side dish that I tried this evening that my family enjoyed. I didn't have everything on hand to make this, so I had to omit and substitute a few items. It came out very tasty with my substitutions. I didn't have corn flakes, so I omitted the bread aspect. I didn't have sour cream, but I did have plain yogurt, that I used in place of the sour cream. I also only had a red bell pepper. I sautéed and added 1/2 cup chopped yellow onion and 3 large minced cloves of garlic to the 1/2 cup of chopped red bell pepper in olive oil with 1/4 tsp fresh ground pepper for several minutes and then added these sautéed vegetables to the cauliflower and then mixed in the cheddar cheese and yogurt. I didn't add salt since the cheeses have so much salt in them already. I will make this again.

White Chili with Ground Turkey

I did some modifications to this recipe. I don't eat turkey, so I used 1 pound of ground chicken meat instead. I am also very conscience of salt, so I used two cups of water instead of the chicken broth. I did not use the cinnamon, I only used two cans of rinsed white kidney beans and I did not puree a third can of beans. After simmering for 15 minutes, the water cooked out and the chili became thick and when I served it I used Colby Jack cheese and sour cream for garnishes. This could have been a filling for a burrito, since it was thick.

Grandma's Five Cup Salad

I grew up on 5 cup, but the way we made it was, literally, 5 ingredients and 5 cups. One cup pineapple chunks, one cup mandarin oranges, one cup shredded coconut, one cup mini marshmallows and one cup sour cream. Fold all ingredients together and refrigerate until cold. Every Thanksgiving and Easter we serve this dish!

Beef Stroganoff III

I was trying to make dinner with what I had on hand and I stumbled upon this recipe. I had one pound of ground beef that I substituted for the chuck roast. I used one medium onion chopped instead of the green onions, 3 large cloves of fresh garlic and close to 3/4 pound of fresh sliced mushrooms instead of canned mushrooms. It turned out great. I will try it again with a chuck roast or London broil, but it was really good with the ground beef. Served it with fresh steamed string beans.

Baked Garlic Parmesan Chicken

Great recipe! I didn't have six chicken breasts, but I did have two chicken breasts and 5 chicken thighs. Used three cloves of garlic, but followed the rest of the recipe as stated. My family loved it. Keeper!!!

Ten Minute Enchilada Sauce

I liked the red enchilada sauce that I made. I did alter the receipe, thought. I used 3 tablespoons of flour. I doubled the cumin and garlic powder, but use 1 tablespoon of dried diced onion and 1 teaspoon of Kosher salt. I also added 1 1/2 cups of water and let it simmer for almost 20 minutes and then made a 13 x 9 pan of beef and cheese enchiladas. They were great! I will not purchase canned enchilada sauce ever again.

Mexican Rice

I liked the rice that I made. But, I did alter the receipe. I did not have the Mexican saffron, so I did not use saffron. I used short grain brown rice. I only had one 8 oz can of tomato sauce, so I added two large chopped Roma tomatoes. I also added 1/2 jalepano pepper finely chopped. I also cut the salt in half and used 1 teaspoon of Kosher salt. I also used a red bell pepper instead of a green bell pepper. Brown rice takes longer to cook than white rice, so it simmered for about 35 minutes. My family really liked the rice. I will make it again with the alterations that I made.
