Mexican Spicy Bean Salad

I am Over the Moon with this salad. So much flavor , color and fiber!!! How much better can it get! I used canned corn from Trader joe. I more than doubled the garlic. I was heavy handed with the cilantro, I used 1Tbsp.of sugar and 1 Tblsp. of Splenda. I used 3/4 th of the dressing. Now I need someone to prevent me from going to the fridge to just sample a little bit more. Thank you Karen Castle for sharing this recipe!

Ethiopian Cabbage Dish

This is so phantastique, I made this dish twice in a row, because it is that good !!!! I only used 1/4 cup of olive oil, I doubled the spices, but not the salt . It is so perfect this way and nothing else should be changed I precooked the carrots and potatoes just a little bit in the microwave, which worked out great because the cabbage does not over cook tht way. This dish goes well with chicken and ham. Guten Appetit! This might also work in a slow cooker. Saute the onions in olive oil, add all ingredients to slowcooker and let it cook!

Oatmeal Sourdough Rolls

This is a very tasty roll, but in my opinion not suited for dinner, because of its sweetness. One could eat it for breakfast of course. I will not make this recipe again.

Cookie Dough Hummus

this is just fabulous!!! I wish that I could give this 10 stars! I used 2 tablespoon of peanut butter, 2 teaspoons vanilla and 2 teaspoons cinnamon. I also added some splenda. I stir this into plain jogurt and enjoy it for breakfast or as a very healthy snack. Children love it too!

Creamy Dill Cucumber Toasties

This is so overly salty, that we could not use it, because of High Boodpressure issues. I wil l try it next without the seaoning mix and adding dry garlic and onion powder and some white pepper. I might also switch to using sour cream rather than Mayo, it contains less sodium That might do the trick.

Cheesy Quinoa Pilaf with Spinach

Wonderful recipe. , but can be simplified in following steps: to 1/4 c Quinoa add 3/4 c water, cover and cook for only 10 minutes, turn off heat, cover and let sit for 5-7 min. The longer the Quinoa sits the softer it becomes. I only let it sit for 4-5 minutes because I like it chewier. By the way one can render the Quinoa into flour by using one's coffee grinder! That way it is easy to sneak it into foods, the kids will never know (Smoothies)and they will receive all the complete animo acids that one finds in meat. A complete protein! Thank God for this super food!

Tender Tomato Chicken Breasts

Please do use frozen vegies, unless you have harvested your vegies from your garden. Frozen vegies have more vitamins and minerals than frsh ones from the market. (transort from the field to the store, etc. Frzen vegies are harvested , blanched and frozen toute de suite! They do not lay around ! I microwave them in 1 Tablesoon of water and I do not discard the it, it is full of vitamins and minerals. Please you nice people out there do not mind my little rant here. It is well intended.

Creamy Vanilla Pudding

This is the proper way to make pudding , easy directions and the egg yolks give the pudding a nice collor. IMO it needs 4 Tbsp. of cornstarch though.

Creamy Chicken on Linguine

I improved the recipe by using chicken thighs as the dark meat is so much more delicious. I omitted the water but not the bouillon (used better than bouillon) to intensify the chicken flavour. I used half+half for health reasons. Used white pepper and Taragon and some Parsley.

Romano Chicken

The beauty of this recipe is that it is done in 4 Minutes. in the Microwave! And it truly is great! Why bother go the conventional way, heat up the oven and bake for over 30 minutes. A total waste of energy !A total waste IMO.

Downeast Maine Pumpkin Bread

I have made this for over 20 years. Now I bake it for my grand children. I made it a little healthier, by cutting back the sugar to 1.5 cups and I add 1 cup splenda. Instead of the water I use skim milk for extra calcium. I add 1 cup of chopped walnuts, they contain healthy oil for their little brains. Now I even sneak some white whole wheat flour(1/2cup) into the recipe. I reduce the white flour by the same amont of course.
