Blueberry Cream Muffins
This is a fantastic muffin recipe! They were just perfect. I read the other reviews and chose not to add any extra sugar and it really was perfect. I generally love sweet things, but these really were great not-too-sweet. The tops of the muffin have a nice slightly crisp texture, and adding a streusel topping (another reviewer suggestion) would take away from that. They domed up beautifully. The flavor was great with just the vanilla. No need to add any cinnamon or nutmeg. I did add walnuts and raspberries. This is my new favorite muffin recipe!

Black Magic Cake
Seriously, this is the BEST chocolate cake I've ever made! I multiplied the recipe by 1.5 because I was making a cake for Easter but also wanted to make just a few cupcakes. It made 2 round layers and 12 cupcakes. I baked the cupcakes for 22 minutes but the could have cooked just a couple more minutes. Next time I'll set the timer for 25 minutes. I didn't have buttermilk, so I put about a tablespoon (maybe a little more) of white vinegar in my Pyrex glass measuring cup then filled it to the 1.5 cup mark with milk. I let the vinegar/milk mixture sit while I mixed the dry ingredients. Worked like a charm! This will be my new go-to chocolate cake recipe!

Sweet Corn Tomalito
This was delicious and exactly like Chevys! I followed one reviewer who baked it. I put the mixture in a ceramic dish, covered it tightly with aluminum foil and baked it with a separate container of boiling water for 90 minutes at 250 degrees.
