About this Cook
I live with, and take care of, my step-dad since my Mom's passing. Actually, I take care of him, our 4 cats, and my fiance'. No one leaves my home feeling hungry. In fact, most ask for a bed to nap on before going home. :)
My favorite things to cook
I used to love to bake but have found that I love cooking even more. Learning to cook for a severe & mild diabetic was a challenge but I love using creative ideas to make fattening food healthy and just as tasty with a lot less carbs/sugars.
My favorite family cooking traditions
My mom was Ukrainian so I loved when she made homemade pierogis, borscht soup, and cabbage rolls.
My cooking triumphs
My first cheesecake. Turned out perfect and was a hit at a potluck.
My cooking tragedies
Making pierogis on my own. I just don't have a knack for it. They always break open when boiling. :( LOL

Lasagna Toss
So good! I think I almost prefer this to actually making lasagna. I do make changes per personal tastes. I half the recipe and use 2 cups of egg noodles. I also use ground beef mixed with Italian sausage seasoning the meat with Italian Seasoning and adding onion, garlic, mushrooms, and green pepper while browning the meat. I also use more cheeses: Sharp Cheddar and Parmesan as well. It comes out the perfect balance of gooey, cheesy, meaty, and yummy! Even halved, this feeds 2 adults for dinner and lunch the next day and even dinner again. We always have it with a garden or ceasar salad.

Death By Chocolate III
This is one of the best dessert recipes out there for taste, ease, and forgiveness in substitutions. We love this and the fact you can make it low sugar just by using SF chocolate cake mix instead of brownie, SF pudding, and Lite whipped topping. With 2 diabetics in the house, it's nice to feel sinful and not actually be sinful. I do like to use 1 chocolate pudding and 1 butterscotch, vanilla, or cheesecake flavor to change up the flavor. Thank you so much for this recipe. It's been in my recipe box (and used) for ages and I just remembered to rate it. LOL

Cream Peas
One of my favorite go to recipes for peas. Only changes I make is using 2% milk and Splenda instead of sugar since we have 2 diabetics in the Type 1 and one Type 2. This is a great way to get kids to eat peas too. The sweetness can trick them into liking them! This is always requested in my house if peas are being served. Thank you for the wonderful recipe. Having these tonight (6/3) with meatloaf and mashed potatoes.
