Mmm-Mmm Better Brownies

These were good, but too cakey for my family. I made them with 1/2 butter and 1/2 canola oil. The second time around, I adjusted the recipe as follows: 5tbsp butter, 3 tbsp canola oil, ADD a square (1 oz) of Baker's unsweet chocolate I just heated those up and stirred until the chocolate melted into the butter/oil mixture (microwave). I then added the sugar and stirred for a bit, then set it aside. I mixed up the dry ingredients, then set that aside. I went back to the slightly cooled sugar mixture and quickly beat in the eggs and vanilla, then quickly added the dry ingredients, then quickly poured it into the pan and baked it until a knife inserted about halfway between the middle and the edge came out with only a couple of crumbs. The result was much more to our liking--fudgy with a bit of chew, especially around the edges. Perfect.

Layered Mint Chocolate Fudge

The more complicated fudge recipes are usually reviewed as "grainy," which some people seem to like. Who actually likes grainy fudge? I followed this simple recipe instead and it was perfect. I poured the fudge into a buttered pan of smaller than 9-by-9 dimensions which helped keep it a bit thicker. (Other reviewers have pointed out that with a 9-by-9 pan you might need to double the recipe to keep the fudge from being too thin.) I used Ghiradelli 60% cocoa chips, which my wife pointed out are technically bittersweet as opposed to semisweet - but it was absolutely fantastic. By the way, I liked the fudge to be chilled and she preferred it room temperature. Try it both ways to see how you like it.

Eggplant Supper Soup

VERY good. Followed the recipe exactly except: -used plain canned tomatoes and just added lots of oregano, basil, and a dash of garlic powder. -used veggie penne instead of macaroni (had it on hand) -used dried parsley instead of fresh (about 2 tsp) -started with a stock pot and not a skillet since this clearly won't fit in a skillet. Just sayin.

I thought the recipe was excellent, but it might be better to add lime juice as you're mashing so you don't end up with too much. I felt like it was watery and very limey. I think the avacados I used were on the small side. If I make it again, I will use less salt, less lime juice (perhaps I'll add some zest). Overall though, it had spot-on flavor.

Best Ever Split Pea

Fabulous. I hate peas and I loved this soup. Even my husband, notorious for asking me if there's "more" after we finish eating, felt full with just one bowl of this meatless soup. Amazing. Tonight I'm making it with diluted ham drippings instead of chicken broth...already smells delicious! Note: I thought it was better when pureed. Also, I think a few more carrots would be delightful too in order to dress up the color from "pea" to "pretty".
