Spinach Enchiladas

My husband gave it a 10/10! I changed a few things: I used fresh spinach instead of frozen, threw some cooked chicken chunks into the filling and poured a medium salsa over the top instead of enchilada sauce. This increased the veggies (chunky salsa) and made it spicy! Delicious!

Firecracker Grilled Alaska Salmon

This is pretty much the only way I like salmon! Very delicious! I often freeze some salmon in this marinade at the same time that I'm making some for supper. IT enhances the marinade and makes for an easy supper in the future!

Rhubarb Sauce II

I randomly made this for a big waffle brunch we were hosting. We had over 40 people and many of them raved about the rhubarb "paste." I agree it was good!

Eggplant Croquettes

AMAZING! My husband said it was the best burger he's ever had! I only used a cup of regular bread crumbs (adding about 2 tbsp of Italian seasoning) and cooked the peeled, cubed eggplant in the oven for 30 minutes at 350 degrees C (adding a bit of olive oil so it didn't stick). I also fried the patties in a non-stick pan with about 1/4 cup of olive oil. They turned out really well! And I made them into burgers with lettuce and tomato, topping them off with the roasted garlic and chili aioli I found at Costco.

Stuffed Zucchini

Good! Used hot Italian sausage and NO ground beef. I also cooked the stuff in a pan before packing it into the zucchini and had no problem with time (adding bread crumbs and the egg after cooking of course). I will use this recipe again!

Spoiled Baby Back Ribs

Great recipe! I've never made ribs before and I was a little intimated but the recipe was easy and the ribs were good! My only suggestions would be to made extra sauce and cook it for less time.

Chicken Souvlaki Gyro Style

Excellent recipe for chicken! I only used the souvlaki marinade part of this recipe. I chopped the breasts into thirds, grilled them and then served them with hummus, pitas and greek salad. The chicken is always very moist and tasty. It has become a recipe we often serve to our guests - resulting in a number of compliments!
