Southwestern Egg Rolls

I scaled this recipe to 40 people and took these to Christmas Eve where there were lots of people and they were completely gobbled up in no time! I made some with won-ton wrappers and some with flour tortillas. I served sour cream on the side and left out the chicken just because there was so much food and I wanted to make something more snacky. Everyone loved, loved, loved them! Great recipe!!

Fruit Cobbler

This was soooo easy and really good! My only complaint was there was not enough crust, I'll double it next time. there were crispy places and cake-like places in mine. And I'm not sure if it was the pan I used or my oven or what, but the 55 minutes called for was not enough, I had to cook it another 40 minutes, but it's really good with vanilla ice cream on top. Great recipe!

Double Chocolate Cookie Bars

OMgoodness! these were soooo yummy! One of the easiest things to make and did I mention yummy! they are very delictable and very rich! I'm, already planning to take them to Thanksgiving dinner! I did as others did and used all but a few cookies, and more butter for the crust and put it in a 9X13 pan, but otherwise, did not change a thing! I ended up giving half the pan away just so we wouldn't eat them all, and we could have! Thanks for sharing!

Easy Chicken Enchiladas

YUMMY! This was so good and so quick! Per other suggestions, I only used half of the cream cheese, but I think I may use all of it next time. I also used taco seasoning, added corn, and used black beans instead of pinto. I also added salsa to the top as well as the cheese. Also used whole grain tortillas. Again, yummy and easy!! Thanks for sharing!

Creamy Potato Pork Chop Bake

This was a pretty good meal. I didn't have the french fried onions, but it was still good. Personally, my hubby and I didn't like the cream of celery soup (I'd never used it before)so, when I make it next time, I'll use cream of chicken or mushroom. It's something different, without being too different! Thanks for sharing!

Vegan Black Bean Soup

I am eating this soup as we speak, and I really like it. I was kind of scared, but it turned out great. The flavor is good. I used organic vegatable broth, used 3 cans of beans instead of 4, and didn't have any cumin. I agree with some posts that it has a beany taste to it, and can't taste the tomatoes, but it's fixable for next time, I may add 2 cans of beans and 2 of tomatoes. It looked so good before I blended the beans and tomatoes, so I think it would work even without blending them, if you like chunky. All in all, it's a quick, hot, satisfying soup, especially on this snowy, wintery night! Thanks for sharing! I'm going for seconds right now!

Ham and Swiss Casserole

This is a tasty, quick and satisfying dish! I used regular pasta noodles, and I added some cream of mushroom soup on the advice of others, since hubby doesn't like chunks of mushrooms, it made it creamy. I also didn't have swiss cheese, so I cut up Velveeta, it was soooo good. Thanks for sharing!

This was an easy, quick and satisfying meal! I took advice and coated chicken with taco seasoning, and I didn't have any cumin, but it was still great. A good change from the usual. Leftovers are yummy too. Thanks for sharing!

Bubble Pizza

We love, love, love this recipe!! We "have" to have it at least once a week (if not more). This is something I can prepare the night before, and hubby puts in the oven right before I get home from work. My daughter has to have at least 2 helpings (unusual!!). I have slight variations: I use plain 'ole tomato sauce (2 8oz cans) instead of pizza sauce, and put italian spices in the meat or the sauce. I also don't use the sausage we use regular pepperoni. I also cut up onion and green pepper into tiny pieces and cook with the hamburger, as well as using the food processor to chop up a can of mushrooms and putting them in the sauce. Absolutely no one noticed, and they still gobbled it down. i used cheap biscuits they worked great. And I made it with the biscuits cut up and not cut up, I prefer cut up, it's easier for the kids. All in all, a wonderful recipe! Definitly on my list every week!! thanks!

Hamburger Potato Casserole

This is such an easy recipe, great comfort food! On days I'm in a hurry, I use canned potatoes and slice those up, cuts cooking time in half! Great job, thanks for sharing!

Award Winning Soft Chocolate Chip Cookies

Loved these cookies! They are chunky and chewly at the same time, whch I love. I will add chocolate chunks next time, to make them chunkier. Who would have thought that pudding mix makes all the difference?!? Thanks for a great receipe!!

Japanese Chicken Wings

These are just fabulous!! I made them for my husband, both with the wings and then with boneless chicken breasts, and he was floored. I have been looking for a new way to cook chicken, and this is it! I thought with the vinegar in it it would have a nasty taste, but the sugar cancelles that out. This is now a must have for those weekly grocery store trips!!

Perfect Party Punch

This punch was an absolute hit! I froze the bananas for an hour then let them thaw while I was preparing the strawberries, and they turned out fine. I used rasberry sherbert, too. I made this for my daughter's birthday recently, and it was gulped down! There was about 15 people there who drank it, and I had to make it twice! That's some good punch!
