I am recently retired and now have more time to cook...more energy to cook! While working I was exhausted when getting home and too tired, mentally and physically, to start a meal.
My favorite things to cook
I enjoy various types of cooking but mostly main dishes and baking. Although on cold winter days there's nothing like homemade soup, freshly baked bread, and a salad.
My favorite family cooking traditions
My mother, grandmother, and aunts were all good cooks in North Carolina so southern cooking runs deep in the veins but now I enjoy experimenting with those recipes to make them lighter and healthier!
My cooking tragedies
My worst tragedies happen when trying to substitute Splenda for sugar when baking. It just doesn't least not for me!

Sweet Pea Mockamole
Excellent!!! It doesn't taste completely like avocado but it's very close with the other ingredients added. I LOVED IT! I will be making this often as the taste is great! Those who said it tasted like mashed peas did not process it long enough nor add the other ingredients! I used a food processor (large one) and it didn't process very well until the lemon juice and olive oil was added but then I processed till good consistency. I started tasting it and had a hard time stopping! Thanks for the recipe, CACTUSUE!!!

I've made this several times and it's always a hit! So easy there's no excuse for not cooking!

Southern Chicken and Dumplings
I made this using homemade chicken stock, adding diced celery and carrots. I didn't have time to do the dumplings so I followed one of the other reviews and did canned biscuits (large ones) cut into six wedges. I dropped them one at a time into the simmering broth, put the lid on and cooked for 20 minutes....not done......cooked another 10 minutes, still a little soggy in the middle but the taste wasn't bad. Next time I'll try the dumpling recipe!
