Boilermaker Tailgate Chili
I love this chili, but to cut back on the sodium a bit I use reduced sodium canned beans rinsed and drained, as well as no salt added tomato products (diced tomatoes, etc.), 2 bouillon cubes, and omit the extra teaspoon of salt as well as the chili beans in sauce. You can also "sneak" in other vegetables, such as zucchini and carrots.

Cuban Picadillo
I have made this twice now, the only thing I did differently was the color of the peppers (I used orange and yellow). Tremendous hit in my household! Delicious!

Absolutely Ultimate Potato Soup
I have made this soup twice now, the only substitutions I have made is half and half for the cream, dried cilantro instead of fresh, and omitted the tarragon since I didn't have it. The family and I love it. Great!
