My favorite things to cook
I like to cook anything! I am always up for a challenge and something different. Homemade is a joy to me! If I make something from scratch and it turns out great, I am thrilled! I enjoy making all homemade casseroles, stews, chili, jambalaya, soups, anything-kabob, banana nut bread, pies, cakes, cornbread, dips, salsa, potato salad, sheppard's pie, cookies, chocolate dipped pretzels, etc.
My favorite family cooking traditions
An all time favorite is making a great, homemade southern meal, which includes collard greens, cornbread with a slice of onion, black eyed peas, baked ham, rice or potatoes, sweet tea and sliced fresh tomatoes! Yum!

Balsamic Chicken and Fresh Mozzarella
This is a very easy, simple and delicious recipe! Instead of frying in pan on stove top, I cooked marinated chicken in 350 degree oven for 25 minutes. Then I topped chicken with tomato then mozzarella cheese in casserole dish drizzled with olive oil and sprinkled with salt, pepper and basil plus italian seasoning and put in oven for 7 minutes. YUM!
