Shrimp Lemon Pepper Linguini

Simple to make, pretty dish, and quite yummy! Only giving it 4 stars instead of 5 as if I had added the full 2 tsp of pepper, that would have been way too much! I added just 1 tsp, and my husband said that was still too much. I mostly followed the rest of the recipe except didn't have any basil on hand, and added shredded Parmesan cheese on top. My shrimp took longer than a few minutes to cook. I used some really fat noodles and let it really soak up the thin sauce before serving, oh and I did double the wine/chicken broth as others suggested and am glad I did. I could see this being really good with some cream as well. I do recommend this recipe and will definitely make again!

Kung Pao Chicken

This was pretty good! Both my husband and I enjoyed it. I wouldn't say it's exactly like what we get in restaurants, but definitely worth making at home. Like other's suggested, I tripled the sauce, probably could have gotten away with just doubling it. I didn't have time to marinate the chicken in the sauce, so just cooked up in the pan with the marinade, and added to the sauce. Beware of your sesame oil, the one we purchased had a very strong smoky flavor, or maybe they all have this, but I will try a different brand next time. I recommend and will make again.

Bearnaise Sauce II

Wow - I can't believe I was finally able to make a Bernaise sauce from scratch! I don't know that this was full on restaurant quality, but WAY better than the packet and so much easier than traditional recipes. I followed it very closely, except had to use dried Parsley instead of fresh, half & half instead of cream, and I made on the stove top. I liked having it on the stove top so that I could constantly stir it, only a took a few minutes. I whisked all other ingredients besides the butter together on the side, and then stirred that into the melted butter. Don't let the heat get too hot like I did (best to keep on medium low) as it did start to break up. But lowering the heat and vigorous whisking got it right back in shape. It continued to thicken on low heat. It tasted a little too acidic at first by itself, but once we put it on the steaks it balanced out beautifully. I am sure using fresh herbs and wine would make this even more amazing, so I will keep playing around with this recipe. Both my husband and I loved this and I can't wait to try it on eggs! I will definitely make again and I highly recommend!

Caramel Brownies III

Sweetly addictive! I am pregnant and this quenched my sweet tooth craving perfectly! I mostly followed the recipe, except cut back to 1 stick of butter as others had suggested. I found the dough to still be a bit dry so ended up adding a bit extra of the evaporated milk, which worked just fine. The dough does look thin, but it bakes up beautifully. For the top layer, I would take a spoonful at a time, flatten out into discs and spread around on top. Initially the whole thing isn't covered, but it expands as it bakes and covered the whole thing. Will definitely make again!

Salmon with Creamy Dill Sauce

This was so yummy and pretty easy! My husband and I both really enjoyed it. The salmon was very moist cooking this way and the sauce was to die for! I didn't have any white wine (plus I'm pregnant) or horseradish on hand so left those out, and added more lemon juice (because I love) and it was amazing! Next time I will probably leave out the capers. I like them, but didn't seem needed in the sauce to me. The sauce is also good on potatoes. I will put this into my regular rotation!

Broiled Tilapia Parmesan

So quick, easy and yummy! I followed the recipe, but did not add the basil. Next time I will probably cut down the butter used. My husband really enjoyed it as well, I definitely recommend!

Dill and Butter Squash

Very yummy side dish! I halved this recipe as I was cooking dinner just for my husband and I. Next time I will cut down the butter a bit more. At first I thought it would be too much dill, but it is wonderful with the lemon juice and the veggies. I will definitely make this again!

Gruyere Spinach Casserole

Very good dish - especially if you already like spinach! I personally loved this. I made it for a Christmas meal, everybody said it was good, but don't think it was a huge favorite either, except for fellow spinach lovers. I made as the recipe stated, except didn't warm the milk. My bechamel sauce turned out great, but next time I will mix this in with the spinach, rather than just put on top. I think that would help even out the flavoring. It is a beautiful dish, I will make again.

Grandma's Green Bean Casserole

The people that ate this, absolutely loved it! I followed the recipe, except for instead of using the crackers I did use French's Onions and added some mushrooms. This was only so it wouldn't look different to the kids eating it. I made this hours before and was able to bake at our family's house. Was so easy. I thought about steaming the green beans, but used the can and it tasted wonderful. This will become a staple for me during the holidays. I highly recommend!

Lucky and Rippy's Favorite Dog Food

Our sweet dog, is very old and not always wanting her regular food and having tummy issues, so this is a good alternative during those times. She gobbles this stuff up! I ended up having to add at least 2 more cups of water, my rice soaked the called for amount up very quickly. I also add water to leftovers as I serve her, the moisture is good. I may add more chicken next time for more protein, this makes a ton of rice. with these minor changes, I highly recommend!

Carrot Souffle

Perfect option for something a little different at the table! This was pretty easy to make, I did boil the carrots a bit longer than 20 min, to get super mushy. Then I was able to blend it all with a hand mixer. I put in a pie dish, so pretty for Thanksgiving. I will definitely make this again, I may top with marshmallows next time. I don't know it will ever beat out sweet potato casserole, but again, very good and a good option!

Cranberry Sauce

Very good for cranberry sauce. Most people in my family aren't big fans of cranberry sauce in general, but like this one fine. I would almost add more sugar next time to help counteract the tartness of the cranberries, for us. I did add a pinch of cinnamon, and mixed brown with the white sugar, as others suggested. I will make again, pretty easy and was good to do the day before. I did use as a 'jelly' on top of bagel and cream cheese later on and that was quite yummy!

Chicken Gruyere with Sauteed Mushrooms

One of our favorites!! The only change I make, is I caramelize the onions on the side, and then put on top of chicken as about to serve. I've made without the mushrooms and wine, if I forgot or didn't have on hand, and it still turns out good. Obviously adding those in give a different depth of flavor. This is pretty easy to make, I HIGHLY recommend!!

Butterscotch Drops

Addictive, and too easy to make! I may be making these more than I should - lol. My husband and I didn't think these were too sweet, of course we both have a sweet tooth. I followed the directions exactly, except also added 1 tablespoon of butter, and turned out wonderfully. I had run out of wax paper, so had to put right on my (greased) baking pans, surprisingly, once they cooled they didn't leave a mess behind at all. Only trickier to pop off the pan, a few break as they do, but not a big deal since just for us. I highly recommend this recipe!

Toasted Pumpkin Seeds

Very good! I was skeptical about the Worcestershire sauce, but it really does give it a good flavor without being over powering. Like others, I added a bit of garlic salt, and brined the seeds for about 10 min before. These turned out yummy! Will definitely do again.

Chocolate Chip Meringue Drops

Sooo delicious and easy! I do add a little Cream of Tartar to help with the meringue part of it and I left out the coco powder. Kids and adults love, and I like that they are slightly healthier than some other cookies out there. Definitely try this!

Buffalo Ranch Chicken and Cheese Dip

Very delicious and easy! I made for a small get together and there wasn't hardly any left! I used the Frank's Hot Sauce as suggested and had a great flavor for this dish. I definitely recommend.

Rich and Creamy Beef Stroganoff

Overall very good! This was my first time making Beef Stroganoff, and it was an easy recipe to follow. I did everything per the recipe except for 2 things. I used about 1/2 the beef (so glad I did) and 1/2 the red pepper flakes (also glad I did). My husband said it was still a little too spicy for him, though I was okay with it. Giving this a 4 stars based on those 2 things, and when I make again, will use a higher quality beef. It did get tender with this cooking, but we like the texture of higher quality. The flavor was great! Heads up this does take awhile to cook, cutting the meat was the most time consuming and labor-some. I definitely recommend it and adjust the recipe to your liking.

Chicken Piccata with Artichoke Hearts

Very good, like others I made tweaks. I omitted the wine and butter. I added more lemon, garlic, and artichokes. I cut way down on the capers, and will cut down on the chicken broth, to perhaps half next time. I served over a rice/quinoia mixture which was good. I would recommend this recipe!

Brownie Frosting

Soooo simple and yet SOOOO delicious! I put on top of brownies and makes them heavenly. I think I may try this on top of my cheesecake and see how that is. The possibilities with this is endless and I can't wait to try them! It does make a lot, I had left over from my brownies. I want to try with powdered sugar and see how that does as well. This is a must try!
