Easy Spicy Roasted Potatoes

Chicken Pot Pie IX

So yum! I made my own whole wheat crust instead of buying it at the store for a healthier, really homemade pot pie. Wonderful winter meal!

Carrot Chile and Cilantro Soup

So yum and so simple! I didn't have any cilantro, but did add some cumin and coriander. I had it as a light dinner with tortilla chips and sharp cheddar cheese sprinkled in. Excited for the leftovers!

Quinoa and Black Beans

Delish! And easy to customize. Like me: I didn't use corn and added bell pepper instead. Threw it in when I added the quinuoa. I added broccoli when the recipe says to add corn. I also slipped in some avocado when it was all done which really made it awesome. I have tons leftover (just made for a dinner for two) and so am excited about future meals.

Layered Fruit Salad

I made this for my family's Thanksgiving dinner and everybody loved it. I used caned oranges and pineapples instead of fresh peaches because of the season. I also layered everything twice, so that there was a whipping cream layer in the middle and at the top. I also drizzle walnuts on the top. So good!
