Guinness® Corned Beef

I now always do my corned beef this way! Easy and tasty. My only complaint is that the veggies don't get a flavorfull as they do when I use the pressure cooker.

Just what I was looking for! Made the bar version and it filled my huge cookie sheet. Only change I made was substituting 1/2 c brown sugar for a 1/2 c of sugar. Omitted walnits. Smelled great while cooking and tasted great!

Chocolate Chip Muffins

Wow! An incredibly bland muffin...not even the chocolate could save them. Needs something more. I'm thinking brown sugar and a TON of vanilla. Not worth making again.

Black Bean and Couscous Salad

This was surprisingly good! I just made it this morning so I wouldn't have to cook in the heat this afternoon and I am thinking about having some for lunch! It was tasty! Here are my changes from the original. I used one can of black beans and whole wheat couscous. I didn't have a red pepper so I substituted 2 tbs of chopped pickled jalapenos (we like it spicy). I used canned corn. Lastly, I added a heaping spoonful of salsa to the dressing, left out half of the oil and put in 2 tbs of red wine vinegar. Absolutely great!

Restaurant-Style Buffalo Chicken Wings

This was a good recipe. Better than the wings we get here in Vermont but not as good as the real ones that my husband grew up on in New York. I buy a big package of chicken wings in the meat department and then we cut them up. We throw away the wing tips (or keep to make broth) and cut at the other joint. For a variation on the sauce, try equal parts butter, barbecue sauce and hot sauce. It is a bit milder and just as tasty!

Banana Streusel Muffins

a great muffin and a great way to use up bananas instead of plain old banana bread! Here are my changes....I used half white whole wheat flour and half all purpose flour. I used egg substitute. I used low fat buttermilk instead of sour cream. I used 3 medium bananas. I also added 1/4 cup wheat germ to the batter. And, I also use more cinnamon than a recipe calls for. I used 1 tsp in both the batter and streusel. These were great with these changes!

Bodacious Broccoli Salad

This was a great, easy recipe. I thought the pepper added a great kick! I used light mayo and I think I will try it with turkey bacon next time. Do let the salad set a couple of hours before eating.

Chai Tea Mix

Awesome! Here in Vermont, I have a hard time finding my Chai Lattes and no luck finding a sugar free mix! I made this with sugar free creamers and Splenda. Perfect! I substituted Pumpkin Pie Spice for the ginger and cinnamon. Otherwise, followed recipe to a T. Great made with water. Next time, I think I will try using a different flavored creamer--maybe hazelnut! I think I will experiment with adding in a little cocoa too!

Wine Jelly

This was a great recipe! I used a cheap merlot...flavor was great! I tripled the recipe and had no problems. I used 1.75 oz. packages of powdered fruit pectin. No problems setting up. It was definetely a jelly consistency. I think next time I will try it with the low sugar pectin!

All Day Apple Butter

I found this worked best with apples cut in chunks and them used an immersion blender to puree at end! Great apple butter! Used much less sugar! (Barley any!!)

Sesame Noodles

Great tasting recipe! I used canola for the safflower oil...otherwise, I followed the recipe to the T. Could make half the sauce recipe, I think. There was a ton of it in the bottom of the bowl. Also, I used whole wheat linguine from a box. Would be great as a cold pasta salad with some blanched broccoli, shredded carrot and pea pods!

Blueberry Crumb Bars

These were fantastic after they had set for a day. Leave them a day before cutting into them! A few hours out of the oven, they weren't anywhere near as good. Followed recipe as written!

Slow Cooker Beef Stroganoff I

Okay this is a good basic recipe. I double the recipe. Used half golden mushroom and half roasted garlic cream of mushroom soup. Added one package beefy onion soup mix. Also added some cooking sherry (1/4 cup). An hour or so before serving, added fresh sliced mushrooms (about 1.5 cups).

Banana-Oatmeal Bread

I am a subscribed to cooking light and love their recipes. I love this banana bread. I always use more banana than the recipe calls for, no matter what recipe I am using. I usually use an extra banana. This recipe makes a moist and tasty banana bread. I enjoy the added texture of the oatmeal.

Pico de Gallo Chicken Quesadillas

Very good. I made two types of quesadillas for the SuperBowl--both recipes from All recipes. This was the winner. More flavor and pretty easy to make. I didn't alter the recipe at all.
