Chicken with Tomatillos and Poblanos

All of the flavors were delicious, but the oregano was too overpowering...I would cut it down to a teaspoon...or eliminate it altogether. Way too much oregano. Otherwise it was fantastic. I also skipped the flour dredge and didn't miss it at all. That took this recipe into the low-carb zone, which is nice when you are a Mexican/ Tex-Mex junkie and need to watch those things.

Rocky Road Ice Cream with Mexican Vanilla

Probably the best chocolate base recipe I've ever tasted...my family is addicted to it! I made it once without the nuts and with the addition of a fudge ripple, still amazing! Try it, you will not be disappointed. Didn't have light cream so increased the heavy cream to 2 1/2 cups and used 1/2 cup of whole milk...this is not the recipe you want to try to cut calories on! I DID use a very good quality Mexican vanilla paste instead of the extract; a quality vanilla makes a bigger difference than most people think. My next experiment with the chocolate base will be to find a good raspberry ripple recipe, and try it with that...(I love chocolate & raspberry together)

Chocolate Velvet Ice Cream

This was the first ice cream I made with my Kitchenaid ice cream attachment, and it was AWESOME! Next time I'll add a little more cocoa. I recommend you use the best chocolate possible for the chips, I chopped up some Special Dark Hershey bars into chunks this time, and the quality of the ice cream's chocolate flavor really cried for a more high-end chip when tasted together.
