Truly Delicious Brussels Sprouts

Rhubarb-Peach Crisp

I really liked yhis recipe, but admit to making it my own. I followed a lot of the recommendations and reduced the sugar to one cup, but I also recommend adding a dash of cinnamon, ginger and allspice to both the fruit and the crumb top. I also toasted 1 1/2 cups of coconut flakes in the preheating oven for ten minutes and mixed it into the crumb top before adding the butter. Mmmmm.

Great Chicken Taquitos

Great filling! I used chives instead of green onions and upped the cumin to 2 tsp. I also used taco sized flour tortillas, brushed on olive oil and baked at 425 for 15 min instead of frying. Oh yum!

Easy Red Beans and Rice

Delicious! I used dehydrated onions, green and red peppers and just rehydrated them with some water in the microwave before adding to the sausage. I also doubled the garlic and oregano and added 1tsp sage. It went great with brown and white rice mixed as well as a light garden salad.

Great, simple roll-up recipe with lots of flexibilty in th breading (I used Italian seasoned bread crumbs) and filling. My picky kids liked it, too.

Hamburger Hash Browns

This recipe turned out really well using dried browns that you toss in salted boiling water. No extra cooking like the other comments. It went really well with seasoned green beans and I bet throwing in sauteed mushrooms would be good in the dish. Black or pinto beans and olives and taco seasoning would be a good version as well!

Shonna's Waffle Browns

This was a really great recipe, except WAY too much pepper! Try 1/4 tsp if you want to feed it to your children. I love that you used rehydrated potatoes since I have a lot of those, but could probably use fresh just fine. I threw in some chopped ham and a bit of shredded cheddar as well as rehydrated peppers and onions. I was even short an egg in a doubled recipe and used a powdered one and it STILL turned out great. I liked it with creamy chicken gravy as well as salsa. My family and my pantry thank you!

Quick Pumpkin Oatmeal

Quick and easy with great texture. I think I was hoping for more of a pumpkin pie flavor, rather than just squash oatmeal. I might try it with maple syrup or something. Great basic recipe for instant oatmeal, though! (Maybe apple-cinnamon instead of pumpkin?)

Easy Vegetable Beef Soup

Very good start. I like a thicker consistancy, so I recommend making a rue with some of the meat fat or butter and flour in the beginning or brown gravy mix with a little hot water 'til smooth and adding to the pot. I seasoned some cubed steak (elk) and seasoned it with salt and pepper, then sauted with with the onions and a couple cloves of minced garlic. This was a great way to use up leftover boiled potatoes or those nasty frozen mixed veggies.
