Jenny's Cuban-Style Slow-Cooker Chicken Fricassee

I made many of the additions/changes that others suggested. I added two packets of the Goya Sazon and 3 tbsp of the Goya Sofrito. I also used 2 bay leaves instead of sage since bay leaves are more commonly used in cuban cooking. I also added about 1/2 a cup of the alcaparrado as someone else suggested. I more than likely will not add this again. The spanish olives had pits in them. I will just add manzanilla olives with some pimentos next time. Also used a little over 3 lbs of chicken leg quarters. It took a little longer to cook. Overall this was very good!!

Mexican Casserole

Took some of the recommendations of others into account & it turned out great! I added taco seasoning to the ground turkey (we don't eat beef) mixture. I also used tomatoes with green chilies to give it more spice. I used a mexican blend shredded cheese & kidney beans instead of ranch beans because I couldn't find them. Once it was done cooking I topped each serving with lettuce, tomato, black olives, sour cream & salsa. It was excellent.

Incredibly Cheesy Turkey Meatloaf

Used less cheese then what was indicated (about 1/2) & used BBQ sauce on top instead. It was really great & my husband loved it! Great leftovers!

Dessert Pizza

This was great! I made it just as the recipe suggested with strawberries, blueberries & crushed pineapple. Everyone raved about it & I will definitely make this one again. The variations you can make with different fruits are huge. I would stick with the cool whip as the base. I think some of the suggestions of using fluff would make it too sweet and take away from the natural sweetness of the fruit.

Buffalo Chicken Dip

Made this for a 4th of July BBQ (a little late in reviewing it) & it was a hit! I served it with corn tortilla chips. The only thing I noticed was that it was very greasy once it baked so I may cut back on the cheese next time. Also, if you or your guests are not a fan of spicey things, back off on the pepper sauce. It was fine for me, but a quite a few ladies were mentioning that it was good, but too spicey!!

Pizza Pinwheels

I took these to a neighborhood Bunko party & they were a hit. They didn't come out quite as pretty some of the photos members posted, but they tasted good. I did place the crescents in the fridge prior to prepping, and that helped with handling them. I added some pizza sauce to the crescent, but will reduce the amount next time to avoid it squeezing out the when baking. I sliced the turkey pepperoni (julienne), and that worked out nicely. Will definitely make this again!

American Shepherd's Pie

Made this with adjustments & turned out great! I used ground turkey instead of beef, since I don't eat beef. Also used a can of mixed veggies, and omitted the celery. There were a lot of veggies in the meat mixture. I also substituted a can of vegetarian vegetable soup for regular veggie soup. Used 4 cps. prepared instant mashed potatoes. Per my husband's suggestion, put about a 1/2 tsp. of chicken base (paste) & 1/4 cp. of water to add flavor since I had used 1 1/2 lbs. of ground turkey. Turned out great, and will more than likely be even better as leftovers.

Dump Cake I

This is sooooooo easy & so good! I've taken it to a couple parties/potlucks, and have received a lot of compliments! I followed the recipe exactly. I have had others that add coconut, but I am not a fan so I didn't include it. Will definitely make it again.

Aunt Millie's Broccoli Casserole

This was good, but I had to cut the salt & pepper, and it was still too much. I will only use 3/4 tsp. of each next time. I also used 3 packages of thawed frozen chopped broccoli instead of fresh. I cooked the broccoli before adding it to the cheese mixture like the recipe called for. I used 2 cups of cheddar cheese instead of 1 1/2. Next time I will try to add a small container of light sour cream. I used fat free soup and light cheese & it still tasted good.

Tater Tot Casserole II

This was very easy to make and very good. I added a little bit of garlic powder and season salt to the sour cream mixture and did not use all of the onions. I took it to a tailgate party and it was gone it minutes. Very good and I will definitely make this again.

Hash Brown Casserole II

This was good but kind of heavy. I did not really care for the corn flakes. They were soggy since the recipe called for baking the casserole covered. If I use corn flakes again I will leave the dish uncovered for the last 5-10 minutes of baking so they can crisp up. Also, personally I thought the onions were too much. I will make this again but with less onions and crisper corn flakes.

This was really good! I used a full 2 cups of shredded cheese and omitted the chillies (because I forgot to buy them) and it was still very good. Everyone loved this and I will definitely make this again.

Burrito Pie

I cut the recipe in half and it still made plenty for me and my husband. I used salsa instead of taco sauce by mistake and it made it a little watery but it was still good. I did use a full pack of taco seasoning on the ground beef. This was really good the night I made it, but was even better the next day. I will definitely make this again.
