Cajun Chicken Pasta

I thought this recipe tasted good but not quite what I expected after reading all the good reviews. I added cherry tomatoes for a pop of sweet in the dish. Yum!

Easy Strawberry Vinaigrette

I enjoyed this recipe. It is very sweet and tangy. I did add an additional tablespoon of coconut oil (because I love the subtle flavor it adds) and it was pretty thick so I also added 1 tablespoon water which thinned it perfectly. Haven't tried it on the salad yet but looking forward to it today!

Slow Cooker Texas Pulled Pork

Awesome recipe. I made it exactly as directed and it was great! However I did feel like I had to skim the oil/fat layer off the top of the sauce once the meat was finished cooking. And added extra BBQ sauce before serving to thicken it up a little. But flavor was great. This is my new favorite way to make BBQ especially in the winter when I can't grill.

Very delicious! I do agree with others that the sauce should be doubled and baking time shortened. I will definitely be making this one again and again! Also goes great with jasmine coconut rice.

Blueberry Zucchini Bread

Just made this...delicious! I used a little less than 2 cups sugar and will probably cut more out next time, and made muffins instead of loaves. I will probably substitute applesauce for the oil next time and try it that way for healthier version. This one is a keeper!!

Baked Kale Chips

I make these all the time! Great recipe as is, but you can also add other spices or flavored to your taste. I sprinkle a little garlic powder. Just don't over-bake or chips will taste bitter.

Simply Divine Meat Loaf with Spinach

I think this is my new favorite meatloaf recipe, I'm always trying to add greens where I can. If your kids are weird about veggies, this is a great disguise! So tasty! I make my own sauce to top it off. This recipe is a keeper!

Simple Sausage Casserole

Very tasty as is but nice recipe to add your favorite breakfast mix-ins. I have tried sprinkling shredded cheddar cheese over the sausage mixture and it is very good with another depth of flavor! Great for taking to gatherings, and SOOO quick and easy.

Creamy Rice Pudding

Great recipe. The only thing I changed was adding 1/8 tsp ground cinnamon. It gave it that extra little flavor kick. Yummy!

Southwestern Beef Skillet

My 2 young kids and I liked it, although I used ground turkey and thought overall it didn't have enough flavor. I added a little salt and black pepper, 1/2 cup green onions, and 1 tbsp southwestern seasoning mix. Also a few squirts of ketchup for additional flavor.

Slow-Cooker Barbecue Ribs

Great way to make ribs without a grill!!!! I used a prepared BBQ sauce (next time I will make the sauce as directed). Browning the ribs in the oven first really made a difference with the finished product. They were still nice and cruchy and saucy on the outside and falling-apart on the inside. This is my favorite of the slow cooker ribs recipes by far! I don't really plan on trying another. Delicious!

Chicken Breasts with Balsamic Vinegar and Garlic

It was good but I wasn't crazy about it. I didn't flour the chicken as others suggested and added 4 garlic cloves instead of the 6. The sauce was very tangy because of the vinager, and I couldn't taste any garlic. If I make it again, I would add extra garlic cloves (8).

French Toast Casserole

Very good! So many ways to vary this recipe. I tried the original recipe first, which was great but I wanted a little more flavor. The second time I added cinnamon to the filling and more to the top. Today I added 1 cup blueberries to the filling, it was delicious! Can't wait to try raisins next time.

It's a keeper! Very tasty. I used thefresh basil and thyme for the herbs and added a little melted butter when combining the herbs and garlic into a loose paste. Better than many restaurants in my opinion.
