Chicken Thigh and Dumpling Stew

Okay, okay I cheated - kind of alot. I was in a rush. I cooked the chicken through as directed, did not use the bacon at all, used chicken broth in lieu of vegetable broth. I had no carrots, red onions or celery which I'm sure would have made it even more phenomenal. Instead, I used a half bag of frozen pearl onions. Oh geez, I just looked forgot to add the corn too. I told you I cheated, but I also used 1/2 and 1/2 instead of heavy cream too. FINALLY, I used 3 1/2 pounds of chicken thighs and used chicken broth instead of the water too. Figured it would be more flavor. I didn't have time to run to store for biscuits, so I simply used 2 1/4 cups Bisquick and 2/3 cup half and half and dropped them just the same. SUCH A BIG HIT WITH FAMILY! 10 decent sized thighs and there's only one half of a thigh and one half of a biscuit left and that's for 4 of us! I seriously wouldn't be surprised if my family asked for it again tomorrow. Thanks for sharing such a great recipe!

Cindy's Jambalaya

Excellent and super easy! I'm not a big fan of making rice so anytime I can incorporate it into a dish that's great! I was in a super rush - I used fully cooked andouille sausage and fully cooked southwestern style chicken strips. Added chicken at the end just to heat through. You would never know the sausage wasn't simmering all day. Phenomenal - I also did not use the green pepper as my family is not a big fan of green peppers. Shrimp was frozen - so next time I'll skip the chicken.

Easy Broiled Lobster Tails

My oven doesn't work well so I basically turn it to 450 degrees and that's my "broiler". These were without a doubt the BEST lobsters I've ever made. Ours were quite large - about 9 ounces and I didn't even take care as to the application of the olive oil. I also goofed up and cut the bellies not the backs! Sprinkled with both garlic pepper and lemon pepper as I goofed up and grabbed the wrong bottle first. No, I wasn't even drinking! Just tired I guess. ALL I CAN SAY IS ABSOLUTELY PHENOMENAL AND done in ten minutes flat! Oh, I should also add that I always place a metal skewer through the entire length of the tail so nothing curls. It's a helpful little technique.

Bacon Cheeseburger Meatloaf

I read through the reviews, increased the breadcrumbs to 1/2 cup (and I used Panko/all I had). Family loved it - a little greasy though. I actually think the grease might come from the French-fried onions? I used 85/15, rendered the bacon, etc. I would definitely make again and might simply cut the bacon to 4-5 slices. I think I'd also either omit the french fried onions or halve that amount also. It definitely was the most moist, flavorful meatloaf I've ever had. I think if I tweak it a bit more with the above mentioned ideas, it will quickly switch to 5 stars!

Bacon Cheeseburger Meatloaf

Quick and Easy Shrimp Fajitas

We're not a big pepper fan family so we eliminated those. A sprinkle of crumbled feta is absolutely phenomenal in these! Heck - they're even good enough to stand on their own. Another "tip" is to use cleaned/frozen shrimp - cooked or uncooked and cut the tails off while frozen. Makes it so much easier.

Spicy Garlic Lime Chicken

Exceptionally easy and good! I used boneless, skinless thighs instead of breasts because that's what I had on hand. I probably quadrupled the recipe for the dry ingredients. I also used about 5 limes (they were small) and served it with additional lime wedges and sliced avocado for those of us that love avocados. My son and I both agreed that the coolness of the avocado really complemented the spiciness of the cayenne and black peppers. I would definitely make again. I served it with a red bean and rice mix and some prepared bean and cheese burritos topped with salsa.

Peach Cobbler

Amazingly easy! Tastes great - now if only I can stop eating it long enough to tell everyone else it's ready! I used a 24.5 oz jar of Dole mixed fruit (peaches, apples and pineapple in white grape juice). I had no milk so I used light cream. I melted the butter in the baking dish (in the oven) while gathering the other ingredients. Can't wait to make again! Probably tomorrow! Contrary to another reviewer, I loved the slightly salty flavor. I think it makes the dish! Next time I think I'll try mixed berries. I too added cinnamon to taste and a bit of washed, raw cane sugar. So glad my son said I really have a taste for peach cobbler! Voila, one minute to look up the recipe and 30 minutes later it was half eaten!

Antelope Goulash

I've made a very similar dish, using ground venison but I added a T. of olive oil as venison can be very lean. I also eliminated the green pepper and added mushrooms instead. Finally, if there's too much juice, simply add a bit of tapioca. Also, I've made in a slow cooker and have had wonderful results.

Emma's Belgian Waffles

I followed the recipe to the letter and these waffles are amazing! I served them with Ghiradelli white chocolate chips and fresh, plump raspberries. All I can say is HEAVENLY! Made on Saturday and making again on Tuesday! Can't wait to eat them. I'll even get up early to wait the forty minutes of rest time!

Pear and Gorgonzola Cheese Pizza

I've made a similar recipe many times, however, I've purchased Gluten Free pizza rounds, more like flat bread from my local Fruitful Yield store. They're a little pricey, but really come out great. As other reviewers said, I also skip the nuts, drizzle Balsamic (aged 12 yrs tastes the best!) and I also spread a very thin layer of pear butter on the flatbread. To die for! My kids love them too. two tween aged boys.

Slow Cooker Venison Stroganoff Meal

Fantastic! Superb! And EXTREMELY EASY! My husband kept pestering me about making venison for him. I had less than a half hour to throw everything together before I needed to leave the house. I ran to the freezer, grabbed four sirloin steaks and popped in the micro for one minute to get the wrappings off. I placed the cut meat in a zip lock bag and literally poured in a "ton" of garlic pepper, garlic powder, a no-salt seasoning blend and a bit of sea salt. Browned in olive oil in two batches and into the slow cooker. I ran out of time and nixed the flour in the oil part. I had only one can of cream of mushroom soup and used that and added one can of cream of chicken soup (I know, sounds odd) filled each can half way and scraped the remaining soup into slow cooker. I turned it to high in error and left the house. Returning to the house, I intended to add sour cream in the last 20 minutes of cooking - only to find I almost added cottage cheese! Opened the sour cream this time and as I was pouring off the excess water I dropped the entire container into the sink full of dirty dishes. BOTTOM LINE - I SIMPLY CANNOT BELIEVE HOW EASY AND HOW FANTASTIC THIS TASTED. NOT A DROP LEFT AND I DIDN'T EVEN FOLLOW THE RECIPE. Another reviewer said their son wanted the same dinner the next night. I can certainly see why. With next year's deer, I will give this recipe along with some of my family's "extra" venison. It's a keeper!
