Parmesan Chicken II

Reviewed: Apr. 26, 2009
i followed natalie p's comments, and this worked out great. when i told my husband i was going to make chicken, he got so excited (i have a family chicken dish i make often). after i told him i was trying a new recipe, all i got was an "oh, nevermind." i said to him, "i promise this will be good! it got really great reviews!" i boiled the drumsticks first, dipped in egg and flour, then dipped into the cheese mixture (i used parmesan, garlic powder, and panko bread crumbs). my entire family loved it, even my 2-year old. thanks for a great recipe!

Super Simple Creamy Chicken Pot Pie

Reviewed: Mar. 6, 2010
My family loves this pie and requests it often. It's simple and easy, and the ingredients can vary with whatever you have on hand. I love the fact that it uses baking mix for the crust and not a pre-packaged pie crust. I use a multi-grain mix and it makes me feel like I'm offering something a bit healthier to my family.

Baked French Fries I

Reviewed: Mar. 20, 2010
love these fries!!! i also cut them shoestring since that's the only way my son will eat them. i didn't measure anything out either, just seasoned as i went and they came out great. having them cut thinner does bake faster, so fries were ready to eat in 30 minutes. thanks for the recipe!

Catfish Tuscany

Reviewed: May 5, 2010
This recipe is amazing!!! It is so simple and quick to put together. My husband accidentally bought catfish instead of our usual tilapia, so I had to find a recipe since I've never made it before. I wish I doubled the recipe because it is that good! I omitted the mayonnaise since I didn't have any, and I don't feel like it's missing any flavor. I broiled each side for 6 minutes each, and then I topped it with sliced tomatoes and mushrooms. I broiled it for another 6 minutes. An easy, healthy meal that can be made any weeknight.

Janet's Rich Banana Bread

Reviewed: Dec. 16, 2008
this bread is amazing! i substituted with whole wheat flour, and it did not come out dense at all. i followed other reviewers suggestions and mashed the bananas. i also used the mixer for creaming the butter and sugar, then mixed the rest by hand. i baked for 1 hour and 15 minutes and it was perfect. i've already made it twice this week and plan on making more! wonderful recipe! UPDATE: I made this into mini muffins and regular sized muffins. The minis bake in 15 mins and the regular sized in 20 mins. So much faster! Plus each piece gets a bit of crispy crunch. I added pecans and chocolate chips (1/4 cup each). Still amazing.

Chocolate Eclair Dessert

Reviewed: Oct. 24, 2010
WOW this is a pretty amazing dessert considering how quickly it can be put together. I used a 9 x 9 pan instead, used only one package of vanilla pudding with 1.5 C milk. I also used canned whipped cream since that was what my local market carried. Definitely making this again!

Baked Garlic Parmesan Chicken

Reviewed: Jul. 29, 2008
omigosh, this was so good. i thought this was the first time i followed this recipe, but apparently i had already reviewed it! this time around tasted so much better. i used 3 cloves of garlic, panko bread crumbs, added rosemary to it since that's all i had, and used thigh pieces cut in half. i baked at 350 for 35 minutes. what a great alternative to milk and egg batter. we love garlic, i may add more next time. i will also try topping with fresh parmesan and broiling for the last 5 minutes for extra crunchiness. i also want to try making popcorn chicken. thanks for the recipe, my 4 year old ate A TON!!

Easy Sugar Cookies

Reviewed: Oct. 29, 2010
Made these exactly as the recipe states, and they taste amazing! Love that they are not too sweet, and I think I may even go less on the vanilla next time. I chilled the dough and rolled it out to make pumpkin cutouts. The dough spreads really easily so I don't recommend using cookie cutters with a lot of detail (the ghosts and bats ended up like big blobs). I rolled it out to 1/4 inch and took them out at 6 minutes. Definitely making some Thanksgiving cookies with this recipe next!! Thanks for an awesome recipe!!!

Creamy Rice Pudding

Reviewed: Jun. 1, 2008
awesome rice pudding even with soy milk! i wasn't sure if it would still be creamy, but it was perfect. next time, i will omit the egg since it didn't seem necessary. i will also try chocolate next time too.

Split Pea Soup with Rosemary

Reviewed: Nov. 13, 2009
i really love this recipe! i wouldn't change anything about it, except that i will double the recipe next time! there was not enough to go around!! i do have to say that depending on the bacon used, it can be pretty salty, so adjust according to taste. thank you for sharing!

Portobello Penne Pasta Casserole

Reviewed: Mar. 12, 2008
this recipe is great. i made a few modifications. i omitted the milk sauce and instead just sauteed some garlic, the mushrooms, added fresh spinach and soy sauce, and tossed it with cheese in the baking dish. i baked for 15 minutes and put it in the broiler for 2. it was a hit with the family.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Feb. 8, 2010
I LOVE THIS SOUP!!! It is so full of flavor and perfect as is. I make this on cold days and it is the only soup my toddler will eat all the veggies from. I use green enchilada sauce and a can of diced tomatoes and follow the recipe to the T. I also throw the chicken in frozen and shred it about an hour before serving. Perfect perfect recipe, thanks Elena for sharing!

Brown Sugar Meatloaf

Reviewed: Jan. 29, 2008
my family really loves this recipe. i do modify it a bit by using ground turkey, adding one envelope of onion soup mix instead of the chopped onion, i omit the ginger, i also use about 1/2 cup of milk, and i use 1/3 cup of ketchup and 1/3 cup of brown sugar. i use half of that ketchup and sugar mixture in the meat and use the other half on top of the loaf. this really is a great recipe, thanks for sharing it!

Macaroni and Cheese V

Reviewed: Jan. 9, 2008
My family loved this recipe! I didn't put any mustard in since I didn't have it on-hand, and I also skipped the breadcrumbs. Instead, I put more shredded cheese on top after baking and broiled it for about five minutes. I also put only half the amount of milk to make it very cheesy. Next time I will try it with sharp cheddar, as we like the strong flavor.
