Catfish Tuscany

Reviewed: May 5, 2010
This recipe is amazing!!! It is so simple and quick to put together. My husband accidentally bought catfish instead of our usual tilapia, so I had to find a recipe since I've never made it before. I wish I doubled the recipe because it is that good! I omitted the mayonnaise since I didn't have any, and I don't feel like it's missing any flavor. I broiled each side for 6 minutes each, and then I topped it with sliced tomatoes and mushrooms. I broiled it for another 6 minutes. An easy, healthy meal that can be made any weeknight.

Baked French Fries I

Reviewed: Mar. 20, 2010
love these fries!!! i also cut them shoestring since that's the only way my son will eat them. i didn't measure anything out either, just seasoned as i went and they came out great. having them cut thinner does bake faster, so fries were ready to eat in 30 minutes. thanks for the recipe!

Baked Lemon Chicken with Mushroom Sauce

Reviewed: Mar. 19, 2010
love the recipe for the chicken, i did add garlic, salt and pepper. the mushroom sauce was very bland and too thick. i will try using white wine next time and using less flour.

Best Cream Of Broccoli Soup

Reviewed: Mar. 18, 2010
great soup, a bit bland, i needed to add plenty of salt and pepper to taste. next time i make it, i will probably try to find a way to flavor it more during the cooking process without adding salt to the end product. thanks for the recipe!

Super Simple Creamy Chicken Pot Pie

Reviewed: Mar. 6, 2010
My family loves this pie and requests it often. It's simple and easy, and the ingredients can vary with whatever you have on hand. I love the fact that it uses baking mix for the crust and not a pre-packaged pie crust. I use a multi-grain mix and it makes me feel like I'm offering something a bit healthier to my family.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Feb. 8, 2010
I LOVE THIS SOUP!!! It is so full of flavor and perfect as is. I make this on cold days and it is the only soup my toddler will eat all the veggies from. I use green enchilada sauce and a can of diced tomatoes and follow the recipe to the T. I also throw the chicken in frozen and shred it about an hour before serving. Perfect perfect recipe, thanks Elena for sharing!

Split Pea Soup with Rosemary

Reviewed: Nov. 13, 2009
i really love this recipe! i wouldn't change anything about it, except that i will double the recipe next time! there was not enough to go around!! i do have to say that depending on the bacon used, it can be pretty salty, so adjust according to taste. thank you for sharing!

Restaurant-Style Chicken Tenderloins

Reviewed: Oct. 21, 2009
I let this marinate overnight and cooked it in the pan on the stove. The flavor wasn't as strong as I hoped (marinating for two days would have been better) and I thought the flavor was not quite right. Maybe because I used an Italian dressing from a health food store? My son did not like it at all. I probably won't make this exact recipe again, will try it with a different sauce.

Jumbo Breakfast Cookies

Reviewed: Aug. 4, 2009
even with the minor changes i made, i didn't feel like this was a super-amazing cookie. my family loved them though, so i think i will continue tweaking. i used pure cane sugar instead and only used 1 cup since i used sugar frosted flakes as the cereal. i also used whole wheat flour and replaced the raisins with chocolate chips. there was too much peanut butter for my taste, so i will lessen it next time. overall though, great way to change up cereal in to-go form.

Parmesan Chicken II

Reviewed: Apr. 26, 2009
i followed natalie p's comments, and this worked out great. when i told my husband i was going to make chicken, he got so excited (i have a family chicken dish i make often). after i told him i was trying a new recipe, all i got was an "oh, nevermind." i said to him, "i promise this will be good! it got really great reviews!" i boiled the drumsticks first, dipped in egg and flour, then dipped into the cheese mixture (i used parmesan, garlic powder, and panko bread crumbs). my entire family loved it, even my 2-year old. thanks for a great recipe!

Sage Pork Chops

Reviewed: Jan. 26, 2009
i used boneless pork chops and 5 minutes was too long to brown on each side. it probably would have been better off at 1-2 minutes. after the 10 minutes, it was already too tough. with the leftovers the next day, i diced the chops and simmered again in the broth with veggies. it was much softer. overall three stars because there wasn't much flavor to it either.

Janet's Rich Banana Bread

Reviewed: Dec. 16, 2008
this bread is amazing! i substituted with whole wheat flour, and it did not come out dense at all. i followed other reviewers suggestions and mashed the bananas. i also used the mixer for creaming the butter and sugar, then mixed the rest by hand. i baked for 1 hour and 15 minutes and it was perfect. i've already made it twice this week and plan on making more! wonderful recipe! UPDATE: I made this into mini muffins and regular sized muffins. The minis bake in 15 mins and the regular sized in 20 mins. So much faster! Plus each piece gets a bit of crispy crunch. I added pecans and chocolate chips (1/4 cup each). Still amazing.

Slow Cooker Chicken Stroganoff

Reviewed: Nov. 24, 2008
my hubby thought this tasted great! i didn't have any cream cheese so i substituted with sour cream. it changed up the flavor a bit from the usual slow cooker dishes i have made in the past that use cream of whatever soup. the chicken was so soft and is an overall tasty recipe.

Thai-Style Peanut Sauce with Honey

Reviewed: Nov. 24, 2008
this is a great base for a peanut sauce. my mom makes it with hoisin sauce, so i'm sure adding that in will taste more like the vietnamese-style peanut sauce. i also added lime with gives it a tangy taste. thanks for sharing.

Cream Cheese Pound Cake I

Reviewed: Aug. 7, 2008
this pound cake definitely doesn't taste like sara lee's, which i think most people are looking for. i thought it was too dense though, and to me and my family it tasted more like moon cake. i did like the taste, but am looking for a recipe that makes a fluffy, light pound cake.

Cheryl's Spinach Cheesy Pasta Casserole

Reviewed: Aug. 4, 2008
delicious base recipe. for added flavor, use a tomato sauce of your choice. i used a roasted garlic spaghetti sauce which added tons of flavor. i also added more vegetables that my family enjoys. this is a quick dinner to prepare for a last-minute meal. i only baked for 20 minutes and broiled for a few minutes. my husband and son loved it. will be making again.

Baked Garlic Parmesan Chicken

Reviewed: Jul. 29, 2008
omigosh, this was so good. i thought this was the first time i followed this recipe, but apparently i had already reviewed it! this time around tasted so much better. i used 3 cloves of garlic, panko bread crumbs, added rosemary to it since that's all i had, and used thigh pieces cut in half. i baked at 350 for 35 minutes. what a great alternative to milk and egg batter. we love garlic, i may add more next time. i will also try topping with fresh parmesan and broiling for the last 5 minutes for extra crunchiness. i also want to try making popcorn chicken. thanks for the recipe, my 4 year old ate A TON!!
