Chocolate Chip Banana Muffins

I made this twice so far. First time I followed the recipe exactly and I felt like they were a bit dry. Still delicious though! I made them again but tweaked it by using banana yogurt. I also used 1/4 cup of oil and 1/4 cup applesauce. I also used more banana, I would say at least 2 cups mashed (I didn't measure). I also used whole wheat flour the second time. They came out so moist!! Definitely making this my go-to recipe with my changes. My kids love them for breakfast, they think they are treats! Thank you Lois for sharing your wonderful recipe!

To Die For Blueberry Muffins

These were great muffins. They really do taste like bakery quality. I followed the recipe exactly. The only change I made was using brown sugar for the topping. I found it to be overly sweet. I will probably half the topping mixture next time, it made too much for me. 20 mins at 400 burnt the topping. I turned it down to 375 and baked for 18 mins and that worked better for me. I used a convection toaster oven but had it on the bake setting.

Best Chocolate Chip Cookies

Perfect cookie! I didn't have enough vanilla extract, so only 1 tsp went in. I also only added 1 C of chocolate chips and left the nuts out. Baked at 350 for 12 mins on a silpat. Perfect texture. It wasn't too sweet at all, so if you're looking for that not-so-sweet delicious cookie, this is it!

Broccoli Chicken Divan

I used this as a base recipe for a casserole. I followed the ingredients and the instructions but mixed it all in with cooked pasta and baked. I did not have canned cream of soup so I made a cheese sauce on the stovetop and added it to the pasta mixture. I also added chopped spinach for more vegetables as well as seasoned the chicken. My kids don't like the crunchy topping so I did not use bread crumbs. Overall great comfort food and I would try it again with a canned soup.

wow i can't believe how simple this is and it is so so good! my son said it tastes just as good as the japanese restaurant we go to. this is going in my weekly rotation recipe list. my family says thanks for sharing!

Donut Muffins

These came out great! Made them the morning of new years, and I like that there is no egg in them. I used whole wheat all purpose flour and also didn't have nutmeg. I'm sure the nutmeg would make it taste even better. My boys devoured them and making them as mini muffins are a perfect size for kids to eat. The sugar mixture makes more than necessary so I would halve it next time. So easy and uses ingredients typically in a pantry. Definitely let them cool first before eating, completely different taste. I tried one straight from the oven and topped with the sugar and it did not taste that great.

Ricotta Cookies III

Followed the recipe exactly for the cookie and all I could taste is flour. I made a powdered sugar/milk icing with sprinkles and my husband and son liked it. I didn't care for the flour-y taste. When I looked at other recipes, it used the same amount of ingredients but half the flour. This recipe has too much flour in it! If I make again, I'd halve the amount of flour.

Penne with Mushrooms

So simple yet really good! I omitted the oil and just sauteed the mushrooms in butter and added a splash of milk to make a sauce. This is really great as is or you can add a variety of veggies to suit your taste. I used the parmesan cheese in the shaker can, but I know it would taste way better with fresh parmesan. There are so many things you can do with this recipe. Thanks for sharing!

Slow Cooker Lentil and Ham Soup

Pretty adequate flavor in the soup though I think it could use more. I made this on the stovetop and used thick slices of ham from the deli. I'm positive that the better flavor the ham, the better the soup is. I also added 3/4 cup of water which was perfect consistency and use 8 oz of tomato sauce, not tbsp. Would make again but would find better ham and maybe add sausage like others have suggested or I may try cooking some bacon in the pan first for a smokier flavor. It also makes a huge pot of soup so for our family of 3, I will halve it next time.

Camp Cornbread

SO GOOD and easy too! I would probably classify these as sweet corn cakes. The cornbread mix I bought was a 15 oz box so I doubled the milk, eggs, and sugar and used a whole can of creamed corn. Baked these up as muffins to go with the ham and lentil soup also from this site. Yummo!!

Chocolate Chip Cheesecake Brownies

I am only reviewing the cheesecake part. I used a brownie mix but followed the directions for the cheesecake part. I did not like the texture much, it was too fluffy and didn't taste like cheesecake. My husband loved it though, he thought they were pretty amazing. I know it's not the brownie because I use that mix often. Might try to find another recipe.

Stuffed Zucchini with Chicken Sausage

LOVED THIS!! my whole family enjoyed it (they are big zucchini fans) and the extra crunch from the bread crumbs/parmesan cheese make it so delish. i had a lot of stuffing left, and i followed the measurements exactly. i stuffed 3 zucchinis and only cut up two of the slices of zucchini for the stuffing. i still need to figure out how to calculate the measurements so i won't have so much leftover. i will just be using the leftover for a brunch scramble tomorrow. i also used a diced roma tomato since i didn't want too many juices from canned tomato. i will be making this regularly and more servings! we did not have enough!!

best oatmeal cookie ever! i hate oats! made these because it had such rave reviews, so i thought i'd give it a try. followed the recipe exactly and baked in the oven at 350 for 12 minutes. perfect perfect perfect.

Fluffy French Toast

my son who refuses to eat any kind of bread ate this up like it was candy! i halved the recipe and used 2 eggs, whole wheat bread, and cane sugar. i don't think i soaked the bread in the mixture long enough because the inside was still dry. i froze the leftover slices as well, hopefully they will still be as good when i toast them up.

amazing!! made this for thanksgiving, i have never made sweet potato casserole before. everyone loved it, my husband thought it was the best dish on the table. so glad i found an option other than with marshmallows. will be making this yearly!

Whole Wheat Pumpkin-Applesauce Muffins

pretty good muffin! i omitted the oil and white sugar. i used 2/3 cup brown sugar only and about 3/4 cup applesauce. i didn't have pumpkin pie spice and i also used whole milk instead of buttermilk. they came out very moist and not too sweet. perfect snack for little ones as well as big kids!

Easy Sugar Cookies

Made these exactly as the recipe states, and they taste amazing! Love that they are not too sweet, and I think I may even go less on the vanilla next time. I chilled the dough and rolled it out to make pumpkin cutouts. The dough spreads really easily so I don't recommend using cookie cutters with a lot of detail (the ghosts and bats ended up like big blobs). I rolled it out to 1/4 inch and took them out at 6 minutes. Definitely making some Thanksgiving cookies with this recipe next!! Thanks for an awesome recipe!!!
