About this Cook
I am a wife to my wonderful husband and a mother of three. I am a foodie wannabe. I love different flavors and am always looking for new recipes to try out. Two of my three children are autistic and are very picky eaters. Come to think of it, my whole little family is picky , even the dog won't eat most things that fall on the floor!! That's okay though. I still love food and love cooking food.
My favorite things to cook
I am currently infatuated with a recipe I was emailed from the hungry girl website. Its a chicken stew with dumplings recipe that is delicious and low fat. Meatloaf is another favorite, only because my husband will acutally eat it.
My favorite family cooking traditions
We are working on making family cooking traditions. Our little family on only 5 years old so we are still trying to make our own traditions. We've carried on a few from our respective sides of the family, but we have such a unique setup in our lives, we're kinda having to start our own traditions to keep our kids eating. For instance, on Thanksgiving, we had all the typical fixings that you'd expect and... pizza for the boys. They have texture issues and all sorts of problems because of the autism and we had pizza at our thanksgiving table.
My cooking triumphs
I make the best cup of coffee you've ever tasted. My husband married me for my coffee making skills, lol! My turkey loaf is a winner. Baked ziti is a good one also. I think I'm better at baking than cooking, but I'd rather be a better cook.
My cooking tragedies
Oh lord, where do I start? Maybe the time I tried to make my famous baked ziti with wheat pasta that became over cooked and turned into some sort of spackle. Or, the first time I tried to bake a whole chicken with my friend without realizing that you had to clean out the insides... yeah, that wasn't pretty. When I was pregnant I was getting ready to make some meat sauce and turned on the wrong burner.. I turned on the burner the package of meat was waiting on. My first couple of times making any kind of cookie from wheat flour. Oh yeah, and there was that time I found a cookie recipe on for pudding cookies :P OMG they were so salty!!! Im not sure why, to this day... Was it because I used sugar free pudding mix? I may never know.

Apple Crisp II
I would attempt this recipe again. I think most of the issues I have are from my own mistakes. my mix of fuji and washington apples probably kept it from being as appley as it could have been. I personally think it needed way more cinnamon and maybe some nutmeg, cloves, etc. you could get away with a lot less sugar in the apple mixture and add some more spices to the crumble part. It didn't make the house smell all wonderful either... im still gonna eat it. I cant stand to waste all those beautiful apples!!!
