Creamy Tomato-Basil Pasta with Shrimp

This was an easy and delicious way to make a cream sauce! I substituted sausage for shrimp and it was YUM. I roasted my tomatoes on the oven the previous day with garlic and olive oil.

Asian Lettuce Wraps

Clam Sauce with Linguine

Mmmmm....I thinly sliced red, yellow orange and green peppers and simmered them in the clam sauce. I didn't have mushrooms and this substitution still made a delicious nutritious meal.

Balsamic Roasted Pork Loin

Very good. I quartered 2 onions and positioned them snug around the loin while it cooked. I basted the loin and the onion with the juices. During the last 15min. of cooking, I added 1/2 cup of white wine to the pan. PS. I only marinated the loin for 1 hour and cooked it until the internal temperature was 145...then let rest....covered for about 5min. Dinner was super. :)

Raspberry and Almond Shortbread Thumbprints

I made the recipe as written. They were a bit flat and oozy so I put the dough for the second batch in the freezer after I pressed and filled the impression with preserve. Chilling the dough helped it keep its shape while cooking. I pull them out as they are barely browning. This is a keeper.

My Best Clam Chowder

I have made this clam chowder 2 twice. First as written....YUM, second, I used a quart fat free half and half with a splash of skim milk. I also fried up some bacon. Oh, and I used a splash of white wine as an excuse to pour myself a glass. :) I baked some bread, served up the chowder and my husband...of few words....said, "This is good!" That is high praise in my house. Cheers.

Chicken French - Rochester, NY Style

I have made this recipe over and over and over...I LOVE it when I use tilapia...still love it with chicken. I use about half the chicken broth but taste taste taste while you cook. YUM.

French Onion Soup Gratinee

Fantastic. Tip: dried thyme, parsley and a bay leaf fit perfectly in to a tea bag. take the tea out and refill with my herbs. :) Works great!

Raspberry Swirls

VERY good cookie. I doubled the recipe and broke the dough into balls, wrapped them in plastic wrap and threw them in the fridge for an hour. I rolled each dough ball out and spread the filling. After I tightly rolled the each cookie log, I placed them in the freezer over night. I just sliced and baked all my cookies and they look and taste great!!!

Dry Rub for Ribs

HOLY YUM!!! I've made bbq ribs many times but never used a dry rub. SOOOOO GOOD!!! I cut the salt in half and added 1tsp of dry mustard and 1/2 tsp cumin. VERY GOOD.
