Jay's Signature Pizza Crust

Best.Crust.Ever! I needed two pizza crusts and so I doubled the recipe. My changes: (1) substituted 2 cups white flour for whole wheat flour. (2) For knead I used bread maker, because I'm lazy like that. BONUS: Be sure and give a generous edge crust on your pizza! Then keep the honey on the table and the kids (and you!) can eat the crust w/ honey for dessert! Seriously - its that good!

Irish Potato Candy

Just made these with the kids. Here's what I want to remember for last time. Every few minutes I had to stop and put the mix back into the fridge to firm up a bit before I could continue forming the balls. I think with these mods it will be a 5 star. It is too sweet (which is something I very rarely say). I will cut the sugar down to 3 cups - 2 and 1/2 cups into the mix and save about 1/2 cup to mix with the cinnamon to help cut it.

Whole Wheat Honey Bread

It tastes great, but I can't get it to fluff up right. I'm going to try the Vital Wheat Gluten as recommended in the recipes.

Sweet Pretzel Nuggets

I made these at the last minute to add to cookie baskets. I was so disappointed. All of the pretzels on the bottom burned. I'm not sure what I did wrong; I stirred them and only nuked for 6 minutes total. I used regular pretzel twists instead - maybe that's why?

Chewy Peanut Butter Cookies

They were good but not great. They came out flatter than I like and I'm not sure what I did wrong. The picture shows them thicker and I thought they would be. Otherwise, great recipe! I only baked half and have the other half rolled in the freezer for later. Thanks!

Baked Dijon Salmon

My new favorite salmon recipe! Thanks so much!! The only modification I made was that I made extra sauce to heat up and pour on top of the fish before serving. My husband asked if I would make this regularly - wow!

Chai Tea Mix

Made it for the teachers, coworkers, and others. To make it more affordable: 1 tsp Cardamon = 1/2 tsp Nutmeg and 1/2 tsp All Spice. This substitution is delicious! Also, I thought I could get a huge thing of French Van. Creamer at my big grocery store but not in the powder. I know that I can get a big thing of it at the club warehouse grocery stores and will buy that there too!

Shrimp and Sugar Snap Peas

I modified this for Phase 1 of South Beach (eliminated the pasta) and loved it. The chili oil really adds a new deminsion to the flavor that I will use in future cooking. Thank you!
