Authentic Enchiladas Verdes

This is the first time I have cooked/prepared food with tomatillas. This recipe was fun. I had to improvise. I didn't have any Serrano peppers so I seasoned with my habenero sauce (Bob's Fire Sauce from this site) and red pepper chili flakes. My only regret is I didn't have enough of the sauce. I will definitely make this again... definitely. Thanx for the recipe.

Salmon with Tomatoes

this was even better than I thought it would be. I'm not a Salmon fan but this worked out real well. I substituted pasta for the rice since we had rice last night, but it was very good! The combination of dill, paprika, garlic, Parmesan and parsley was very good!

Sauceless Garden Lasagna

I made this recipe this evening - I had no zucchini so I used Brussels sprouts. Any of the noodles that are not covered will not cook. It was very, very good, though... the possibilities varying the vegetables is endless as long has you use lots of tomatoes. I had no feta so I used mozzarella, Parmesan, and jack cheeses.

Avocado, Tomato and Mango Salsa

This was a great hit at our Memorial Day Cookout! The mango is so sweet but between that and the tomato/garlic/jalapeno/onion, the flavor of the avocado got lost in the shuffle. I give this four stars because I found the five star salsa on this site: Grape and Avocado Salsa... totally different but totally avocado. Enjoy!

Sinless Mississippi Sin

This was pretty good. I think I will make it again with more cheese. I didn't trust the part about the whole bunch of green onions because mine were so thick but I should have. I used a 12 oz jar of marinated artichoke hearts and could have used more. The party bunch, though, loved it!

Grape and Avocado Salsa

This stuff is wonderful! I took this to a big party so I used 4 avocados, 2 cups chopped grapes (thank goodness for my ulu knife and board!), two cloves of garlic, 2 Tbl chopped onion, about 1/4 cup each of the peppers, "ReaLime" juice (the lime I bought didn't produce enough), cilantro, sea salt and pepper - it was quite good! The sweetness of the grapes just brought out a richness to the flavor that was wonderful! I served this with pita chips. No left-overs!

Easy Batter Fruit Cobbler

Oh yum! To the batter, I added some nutmeg and twice as much cinnamon... I used fresh peaches... so easy and so yummy. Served with shush (whipped cream)... hit that sweet tooth spot without over-whelming! Thanx for the recipe.

Grilled Balsamic Peaches

These were pretty good... I served these with steak and a variety of grilled vegies (zucchini, yellow squash, red onion, mushrooms, yellow bell peppers), grilled corn on the cob.

Savory Summer Squash

I had a good time with this one! I don't have marjoram Nor Italian seasoning but I used oregano, thyme and rosemary. I also put some julienned new potatoes in it and fresh Parmesan on top... very tasty! Thanx for the recipe!

Mini Sweet Potato Samosas

I used baked sweet potato, sauteed onion and garlic, crumbled bacon, Parmesan cheese, a little cumin and a little curry for the filling which was great. I didn' t how the won-ton shells cooked up - the taste was great but they were a bit mushy even though I cooked them extra time trying to get them to crisp up a bit. Maybe using olive oil instead of sesame oil made the difference. I sprinkled the top with freshly grated Parmesan cheese. The two dipping sauces I used were soy sauce and the mustard/wine mix. They went over well at the party, though. Thanks for the recipe.

Cheese Blintzes

I've never made nor had a home-made cheese blintz before this. I followed the recipe to a T. I left them whole. They were tender and tasty. I will make this again soon. Next time, I may try substituting the milk/vanilla with a liqueur - such as Frangelico, Kahlua or Bailey's.

Italian Torte

This is a delicious and unique presentation to this combination of ingredients. I used jarred garlic pesto so was glad I used only half of what was called for in this recipe... and also glad I put only the one clove of garlic in the 16 oz of cream cheese that was called for. I served it with big stone wheat crackers and used a serrated pie cutter. It was a messy process and that is my reason for knocking it down to a 4 star. I'm not real sure how to improve on that mess-factor. Maybe using these same ingredients but small cheese-bottom layered with the pesto/cream cheese/tomato combo that can be placed on a cracker or not. And, though I'm a garlic-lover, I think I'll make my own pesto next time and cut back on the amount of garlic over-all.

Oven Baked BBQ Ribs

I was surprised how this sauce thickened up. The only changes I made is that I replaced half the water with beer (I actually used dark beer) and I added some allspice and a small amount of liquid smoke. I didn't cover this and did flip them every 30 mins. They were totally cooked in 2 1/2 hours. My husband gave them a four but I think he's slanted by thinking of the usual grilled variety of ribs... enjoyed; thank you for the recipe!

Ham Pan Sandwiches

Interesting... Pretty good... I used some peach salsa and honey mustard dressing in the sandwich so I changed it up a bit but the dip was very interesting and good I haven't had anything quite like it before. I will probably make this again...

Marzetti® Honey Dijon Chicken

This is definitely edible and this is saying a lot for someone who doesn't like chicken (me)... I marinated a boneless, pounded chicken breast all day (after poking it with a fork)... baked it for about 20 mins. Served with jasmin rice; sautee'd onions and peas. For dessert, I sauteed apples with cinnamon sugar, topped with ice cream and hot fudge sauce.

Tiramisu Bowl

This was a hit at Christmas dinner. I made it with the cooked pudding because I read that it would be better - I actually cooked the pudding first and let it cool before I mixed in the whipped cream cheese and then the whipped cream portion. I also used real whipped cream; I am not a fan of Cool Whip. I saw a lot of coffee vs Kahlua -- so I used both (about 2/3 coffee to 1/3 Kahlua). Instead of shaved chocolate, I used mini semi-sweet morsels because I had some left over. I did use the fresh raspberries - nice touch! I thought it was good but not coffee enough for Tiramisu. Next time, I'm going to use some ground chocolate coffee beans layered in there. And probably layer the whipped cream in there, too. Thanks for the recipe!
