Chicken Enchiladas IV

WOW! This is SO good. We used enchilada sauce rather than salsa. The whole family raved. Love that you can freeze it too. Thank you so much!

YUM!!! We used BBQ sauce in place of the hot sauce for the kids, and they loved them! All the more kick left over for the parents' wings! :) These are super close to Long Wongs wings... which, if you ever get to Mill Avenue in Tempe Arizona, I HIGHLY recommend you try!

Caramelized Baked Chicken

I thought this was pretty tasty, but it didn't knock my socks off. It was very easy, though, and our company certainly ate it up. I recommend doing this in a pan that is EASY to clean, and periodically "basting" it so it doesn't get too dried out... you want the SAUCE to caramelize... not the chicken. :)

Berry Lemon Mousse Parfait

Wow is this ever yummy and refreshing! I added some crushed up ginger snaps for a little extra punch. SOO easy to make, looks incredibly elegant, and tastes fabulous!

Coconut Oatmeal Cookies I

These are fabulous! We made a double recipe to take to the beach and they were ALL gobbled up QUICKLY. I added chocolate chips and toffee bits for some extra fun and they were SOOO yummy!
