Sausage, Peppers, Onions, and Potato Bake
I love this combination. My family has always used a disposable baking tray. Start with a hot oven (400) and just toss the sausage into the baking tray to brown up. Add a quarter cup of olive oil to the pan juices then add the peppers, onions, potatoes and spices; stir it up to coat all the vegetables then cover with foil and drop the oven temp down to 350 -375. Bake for 1 1/2 hours. Serve on Italian sub rolls and enjoy!

Ethiopian Cabbage Dish
Great St Patty's Day meatless alternative. Halved the oil, doubled the spices (except salt), and left the skin on the potatoes. Added a tsp of fresh ginger. I love potatoes so this dish will now be on my favorites list.

Beef Cannelloni Bake
Made this as a vegetarian dish - fabulous. Yes, it takes time, so save it for that rainy/cold day when you have the time to prepare it. Substituted meatless crumbles and used a roux in place of the heavy cream.
