Nana's Southern Coleslaw

I made this to take to a Thanksgiving potluck dinner. While it wasn't the most exciting dish on the buffet, a few people said they liked it. I brought some home. It really does taste a lot like KFC. It seemed "soupy" after 2 hours in the fridge, so I added about 1/2 bag more of the bagged cabbage mix. It had the right amount of crunch. My bags might have been smaller that other reviewers'. I didn't chop the cabbage mix; I used 1/4 c. of sugar; subbed 2 heaping Tbsp. of sour cream for the buttermilk; and used seasoned rice wine vinegar, thanks to other reviews. Will make it again.

Roasted Lemon Herb Chicken

Those who said the chicken took a lot longer to cook are those who stuffed the chicken with lemon and/or onion. Of course it's going to take longer! Just like roasting a turkey--stuffed or unstuffed require different cooking times.

Truly Delicious Brussels Sprouts

Even as a lifelong brussels sprouts hater, I know how healthy they are. I've been trying to like them. I used another recipe from this site a few months ago, I gagged. I came across this recipe a few days ago and made them just for me last night, using 6 sprouts. Since I had read the reviews the day before, I forgot that they should be cooked longer than 45 seconds. Some of the outer leaves were too tough to eat, but I devoured the parts that were edible. Delicious!

Silky Sweet Potato Puree

I just made this and will serve with ham steak in a little while. I baked 1 yam (the orange variety) at 425 deg. for 45 minutes, according to instructions. I didn't peel it; I put the whole potato into the Vitamix with 1/3 c. whole milk and 2 Tbsp. softened butter, salt and pepper (the ingredients cut by 1/3.) I licked the spatula, and I can tell you this is restaurant quality. I didn't add any ingredients. Enjoy, you Vitamix enthusiasts!

Roasted Rack of Lamb

I made this for Christmas dinner last night and it was the best lamb I've ever had. I used panko flakes instead of bread crumbs (which is the norm in my house,) and kosher salt. It didn't even need mint sauce or mint jelly. The 12-minute oven time for rare was perfect. (1.5 lb. rack from Costco.) It served 2 of us and there's one large rib for left for my dinner tonight. Served it with scalloped potatoes, also from Costco.

Devil's Steak Sauce

My review is based on other reviews and the recommendations to serve with venison. Venison isn't available where I live, but I plan to order some online very soon and serve a special dinner to fellow foodies. This sounds like a first-class recipe. I spent 2 weeks in Austria several years ago, and I ate venison at least once a day, most of which was served with a berry-based sauce.

Caesar Salad Supreme

I scaled this down to serve 2, even though it was only for me. I was skeptical about the mayo, but I followed the recipe as written, except I used a heavy hand with anchovy paste (I didn't want to have most of a can of anchovies leftover.) I made it in a mini-processor. It was a bit thick, but that didn't bother me. It was delicious: restaurant quality. (Actually, it was better than the last caesar I had at a fine restaurant.) I ate the whole thing. I'll be making a larger quantity for dinner tonight, so that I'll have enough for another meal or two. Thanks so much for this great recipe!

Corn Tortillas

I'm so proud of myself! I just bought an 8" cast iron Imusa-brand tortilla press from Amazon (about $23) and it just arrived. I was so afraid my tortillas would be a disaster, but guess what! I'll never buy corn tortillas again! I only made enough for 4 (1/2 c. masa harina, 1/3 c. water, and a pinch of salt.) My "golf-balls") made 5" tortillas, and I devoured them. I didn't even have time to try out my new tortilla warmer! Next time, I'll try for larger tortillas. I used a 1-gal. Ziploc freezer bag, cut in two, but I think a 1-qt. size would have been fine.

Basil-Garlic Grilled Pork Chops

It was missing something! I used 1 1/2" boneless pork tenderloin, added some oil and doubled the lime juice, as someone suggested, and let them marinate for about 8 hours in a Ziploc in the fridge. Next time, I'll double the basil and add salt and...something else, not sure what.

Oven Roasted Red Potatoes

I used onion soup mix the first time and thought it was too salty. Now I use lemon-infused olive oil, fresh rosemary, and a pinch of salt. That's it! 40 minutes is about right.
