Grandmother's Pound Cake I

Reviewed: Dec. 21, 2010
I used this as a base and tweaked it to our family's personal tastes:) I used the yellow cake mix, but substituted butter for the oil, orange juice for the water, and pistachio flavored pudding mix. I think its also a must to use room temperature eggs--it gives it more of the pound cake texture. Its good plain or drizzled with a simple icing of powdered sugar, a pinch of cinnamon and water or milk!

Six Can Chicken Tortilla Soup

Reviewed: Mar. 24, 2009
This is an excellent base as noted by other reviewers...I used 2 cans of chicken broth (1 with low sodium), 1 can of cream of chicken soup, 1 can of rotel, 1 can of red gold "chili ready" diced tomatoes, a can of rinsed and drained black beans, a bag of frozen corn and a can of chunk white chicken. I seasoned with California style garlic salt, adobo seasoning, and fresh ground pepper. We toasted a couple of loaves of sweet italian bread seasoned with the California garlic salt and olive oil spray and dipped it since I didn't have tortillas, chips, or crackers on hand. Very easy and very delish:) Even my 3 picky children loved it!! It really does need "tweaked" to fit your family but that's the easy part since you know your tastes!

Alabama Pulled Pig

Reviewed: Jun. 7, 2007
I "cheat" when making this--I use my slow-cooker!! I follow this recipe though and even now that I live in Memphis where BBQ is famous, people always want my secret and think mine is better than some of the highest rated restaurants!! You can't go wrong with this!!!!!!

Aunt Kaye's Rhubarb Dump Cake

Reviewed: Jun. 7, 2007
I had to change this up a little and make a more traditional dump cake, because I didn't have the jello. I used lite cherry pie filling (2 cans) and a can of crushed pineapple and mixed it with fresh rhubarb. Lined a 12" x 9" pan with the mixture, dumped a yellow cake mix on top, added the butter to this and baked at 425 for about 30 minutes! Delish!!!!!

12-Hour Salad

Reviewed: Dec. 28, 2006
I made a few changes, but the base salad here is great. I used Miracle Whip instead of the Sourcream/mayo combo, substituted splenda for the sugar, canned leseur peas for the frozen, and real bacon peices (in the jar) for the bacon. Makes it much, much easier!!! My kids and husband do not eat celery so I leave it out if I'm making it for us to eat at home. Garnish with green onions and its absolutely tdf!

Cowboy Mexican Dip

Reviewed: May 16, 2005
This was the hit of the party! I used mexican velveeta and jarred chili instead of canned as well as several dashes of lousiana hot sauce, chili powder and a tad of cumin. Everyone fought over the leftovers!!

Bacon Ranch Dip

Reviewed: May 16, 2005
This is incredible. I used the real bacon peices that come in the pouch and saved myself from measuring by using a 16 oz. bottle of dressing and an 8 ounce container of sour cream. Its even better the next day and even the pickiest of eaters loved it and asked for the recipe!

Slow Cooker Spinach Marinara Sauce

Reviewed: May 12, 2004
Great recipe. I altered the spices to fit our own preferences and added a very tiny pinch of cinnamon. DH, who hates spinach, loved it but our boys who aren't normally finicky didn't care much for it and they normally love spicy things.

Banana Muffins II

Reviewed: May 12, 2004
These were great!! I added a splash of vanilla and substituted the Shedd's Spread Cinnamon flavored butter for the plain butter. I also used Self-rising flour and omitted the baking powder, salt, etc. My brother-in-law said they were the best muffins he has ever tasted and DH practically ate the whole panful!

Connie's Zucchini "Crab" Cakes

Reviewed: Jul. 11, 2002
Made this for my vegan brother and neice (a couple of substitutions)and my Chesapeake Bay native boyfriend...It passed the taste test as zucchini cakes but not as crab. I drained and drained the zucchini and still ended up with a gloppy mess. The taste saved it from being a total disappointment and we may make it again just because it does use up zucchini in an unique way.
