Acorn Squash
Delicious and so easy. I don't even like yellow squash. Cooking time is long, but preperation is shorter than almost anything prepared fresh. This recipe goes with just about anything and will suit everyone's taste. Even with the butter and sugar, this dish is realy low calorie. You'd never know it by the taste. I add nutmeg, cinnamon, and salt (kosher preferably.) It's perfect reheated also.

Barley Bake
Awesome dish! You could cut down the amount of butter quite a bit, and I'm sure it would still be incredibly delicious. The pine nuts already add a lot of oil. You can refrigerate forever, and it never loses any of it's goodness. Add soy sauce if you like to add salt. It makes it even better.

Butternut Squash Soup with Spinach Ravioli
Absolutely delicious! This recipe is very unique and adds just the right hint of sweetness. I used large cheese raviolis instead of spinach. The recipe is inconsistent as to which ones the recipe calls for, but I can't imagine anything being better than the cheese raviolis in this soup.
