Summertime Tilapia

We all loved this dish. The marinade was wonderful! The next time I make it, I would like to top the fish with a mixture of parmesan and parsley before baking. I think it will look prettier, and the parm will give it just that extra little crispiness and salt that I was looking for. I served it with brown rice and asparagus. It was a big hit and soooo easy!

Roquefort Pear Salad

This was a gigantic hit! I will absolutely make this again! I doubled the dressing recipe but did everything else as directed. I layered the salad as some reviewers recommended, because I was taking it to a dinner party. It looked beautiful. Just before serving, I peeled and added the avodado and gently tossed. I used the Danish blue cheese. Everyone loved it.

Authentic Saag Paneer

I absolutely loved this! The next time I make it, I am going to follow the recipe exactly. I think it would even be better. I used frozen spinach and had no turmeric. I did everything else as directed, including making homemade paneer (easy!!!). Remember to make your rice ahead of time or during the cooking so that you can serve or eat it as soon as it's ready. I forgot the rice and had to make it last . .. .still delicious. I also agree with the reviewers who found the spice level adequate. I think it would be easy to adjust at the end with salt and red pepper, but it was very flavorful even without the turmeric.

Factory Workers Chicken

Ok .. . I'm giving this five stars because it is soooo surprisingly good considering how easy it was to prepare. I would have been even more skeptical had it not been for so many good reviews. I used one pkg. of breasts and one of thighs. .. covered the whole 9x13, so the amount of marinade was perfect. I followed the advice of those who reduced the leftover marinade and then added the 1 Tbsp. brown sugar, 1 Tbsp. lemon juice, and and thickened with corn starch. I served it on a bed of brown rice that I had cooked with chicken broth and ladled the yummy sauce on top. It was really good! My kids loved it too. I will definitely make this again. I baked it on 450 for 30 minutes. I'm sure it's great on the grill or broiled, but the oven is a safe bet for this multi-tasker! Thanks, TBASTIA!

Ragu Bolognese

Outstanding! We all loved this. I did a little balsamic during the reduction stage . . .before the milk . . .and also added about 1/2 cup heavy cream and reduced. I did use some garlic. I divided into thirds, added about 2 c. marinara to 1/3 and had the perfect amound for one box of rigatoni. Everyone loved this! Thx for the delicious recipe!

No Bake Cookies I

These were delicious! Just like the lunch ladies used to make back in the day. I spread them in a pan and cut into squares. I think getting the mixture to a rolling boil was important for the right consistency. They turned out perfectly! Thank you!

Fish Tacos

These tacos were delicious! I pan-seared tilapia in olive oil and seasoned with a little fajita seasoning instead of deep frying. I was searching for something fun to do with tilapia. Next time, I will get the cod and follow the recipe for that. The sauce is amazing. I only used a dash of red pepper and a teaspoon of chopped jalapenos so that my kids would enjoy it. I would serve these for company. Yum! I think this sauce would be delicious on crab cakes too!

Slow Cooker Chicken Taco Soup

Well . .. this recipe already had so many reviews that I hadn't planned on adding my own, but ... YUM! I only altered to save myself a trip to the store . . .used 2 cans of black beans and no chili beans. I used a 7 oz. Budweiser and about 2 c. of chicken stock. I boiled and shredded the chicken and added it to all the other ingred. that were in the crock pot to speed things up. It was a gigantic hit.

Cod with Italian Crumb Topping

I'm giving this 5 stars because it was exactly what I was looking for. Personally, I prefer a bit more spice, and for myself, would add a little red pepper or Red Hot to the mayo rub in the beginning. I didn't even try the egg white, based upon the reviews. Also, I seasoned both sides of the fish with McCormick seafood rub and lightly salted as well. I used thick cod loins, so it took about 25 min. to cook. I got rave reviews ... .even the kids loved it! Thanks.

Oven Pot Roast

Stuffed Hot Peppers

These were fabulous! I used spicy banana peppers and doubled the recipe for a crowd of twelve. I'm back here to share the link with all of my bunko buddies who requested the recipe last night, and thought I'd take the time to mention what a hit they were. Next time, I'll use spicy Italian sausage for a bit more kick!
