Zucchini 'Noodles'

I hand slice the zucchini into long square strips and saute in EVOO and a little butter for flavor.

Sue's Taco Salad

This has been a family favorite for years but we always make it with 1000 Island dressing and little salsa mixed in. I even make a veggie version with Morningstar Crumbles.
