Emily's Famous Hash Browns

Couldn't think of a better hash brown recipe. I took the easy way out and used frozen shredded hash browns (thawed for 4 hours) and they were perfect and much less hassle than doing the potatoes by hand. I followed the recipe exactly except I added some spices to the egg mix like ceyenne pepper, regular pepper and seasoned salt. In addition I didn't use quite the entire bag of hash browns, maybe slightly over 3/4 so they would be easier to flip in the skillet. I won't make hash browns any other way from now on!

Fiesta Scrambled Eggs

This was really good and I'll definitely make again. I made the recipe just as shown except I didn' have any red pepper which was fine and I added a ton of spices. I added some garlic pepper, crushed red pepper, garlic powder and some onion powder. It came out PERFECT! Thanks for the great recipe!

Easy Taco Casserole

OUTSTANDING! I followed the recipe exactly and added a few things........a small can of green chiles, garlic powder and seasoned salt to the meat mixture. I also used HOT picante sauce to give it some kick. This is definitely something I'll be making in the future!

Famous Restaurant Queso Dip

This was outstanding! I didn't need the 5lb version so I recalculated for 12 servings which requires 1 2lb loaf of velveeta. The only thing I did differently was substitute some hot salsa for the water. I only added 1/2 C of water and it still turned out a tad runny, but was absolutely excellent!!! I also added some extra jalapenos for a spicy kick and I have to say this will definitely be the recipe I use from now on for queso.

Slow Cooker Taco Soup

WOW, this is one of the best soups I've eaten! I made very little changes to the recipe, but did do the following; substituted a 14 oz. can of chicken broth for the water, used two 10oz cans of rotel for the diced tomatoes, added some diced jalepeno (I like it spicy) and as many suggested, added a package of Hidden Valley Ranch dressing mix. It was so simple, after browning the meat it all went in the crockpot and 8 hours later we had a great meal. I garnished each with cheddar cheese, some sour cream and tortilla strips and it made it that much better. Can't wait to make it again!

Tortilla Rollups IV

These were absolutely outstanding. I made them for a tailgating party and they were completely gone before the game even started. I was unable to find the fiesta dip mix that the recipe calls for so I just used taco seasoning and it was just fine. In addition I like things a bit on the spicy side so I used HOT salsa and it gave the rollups a lot of kick. Finally I think even more flavor was added by using the jalapeno cheddar tortillas. As many have mentioned, make sure you refrigerate these overnight so that they are easy to cut the next day. I left mine in for 12 hours and using a sharp knife I had no problems and they didn't become disfigured when sliced. I'm already planning to make these again for a work party tomorrow.

Taco Salad with Ranch Dressing

Absolutely outstanding!! I agree with the other reviews in that I didn't use the entire bottle of ranch dressing (about 3/4 of it) and it had plenty to coat the ingredients. I also seasoned my chicken with cajun seasoning for a little added flavor. In addition I used hot salsa and if you like it spicy, this definitely makes it that way. Since I don't like olives, I added in some corn and black beans and those were both great additions.

Flatlander Chili

Absolutely excellent recipe!!! I made it exactly according to the directions (minus the celery) and it turned out fantastic. Oh and I did add a little more chili powder because I like it more spicy. Next time I'd do the same, but possibly use just a tad less tomato juice. Either/or, it was excellent and definitely one to keep at the top of the recipe box.

Brooklyn Girl's Penne Arrabiata

WOW, this was absolutely awesome! It had just enough spice (and yes it did have a little kick) to make this a wonderful and falvorful dish. What impressed me even more is that when I had leftovers, it tasted almost just as good as the original which is hard to do with pasta.

Creamy Spiced Coleslaw

This is by far the BEST coleslaw I've ever eaten. I made about three hours before I needed to serve it and the flavor blended together very nicely and I'm making it for the third time today.
